What did you have for dinner? -Part dois

Marie Callendar's Chicken burrito bowl, tossed salad, a rice cake, a banana.

I was encouraged on my efforts to lose weight by learning today that I burn about 1900 calories a day just sitting around and breathing (severe emphysema), and sleeping. So keeping my caloric intake less than that shouldn't be too hard. I think I already do a lot of days. At least I'm pretty sure I've stopped gaining.

I sure wish I had a daintier appetite, but I'm definitely making progress on not snacking between meals.

You do what you must, MaryP. Working to breathe isn't for the faint hearted, is it?

Oh, yum! What do Hatch chilis taste like?
We grow both the medium and hot type.
After finally done sweating I can tell you we used the spicy ones today.
It depends on the variety. The hot ones have a sweet front of the tongue flavor then hit you with a quick burst of heat that urges you to want more.
The medium ones are just ever so tasty.

No. I recently learned that protein is a friend for those with COPD. Fortunately, beans (especially chickpeas) have a lot and I just bought what I needed to make hummus again. Love hummus on celery and with tortilla chips, in sandwiches, etc. .

I made crispy Buffalo chicken with garlic butter roasted potatoes. I did a good job with this one. It even had a dipping sauce for the side.

Baked Pork pinwheel with a center of mozzarella and peppers, tomato caprese with mozzarella, roasted and sliced red peppers, fresh basil, assorted olives, balsamic dressing.

Yum. There is nothing like just picked basil.

I had sardines on saltines with a little horseradish, celery sticks dipped in (lite) blue cheese dressing, a mandarin.

I'll probably have a carmel rice cake later.

Do you do your chicken wings under the broiler? What was the sauce?
This one was 425 F for 25 minutes. The chicken breasts were coated with a mixture of Buffalo sauce and cream cheese with panko and shredded cheese on top of that. It sounds fattening, but the meal was less than 700 cals per serving according to the recipe. On the side was a mixture of sour cream with garlic dill seasoning.

French bread sandwich with roast beef, provolone, mayo, onions, tomato, lettuce, oil/vinegar, basil and oregano. Delivery. Strawberry ice cream for dessert.

It sounds delicious! I thought you meant wings. Ooops.

It was cool enough to fire up the pizza oven and enjoy being outside. Pop, Sharon and her nephew stopped by with the guest list and dessert samples, so they joined us. The cheesecake with toppings bar, carrot cake and my granny's chocolate biscuit pudding were the winners as well as some Rosh Hashanah faves.

What are those Rosh Hashanah faves, if you don't mind?
I am so excited for Pop and Sharon, looking forward to more of their (food :) )story.

I do bake my wings in my air fryer oven (not my air fryer), I pat them dry and sprinkle with salt, pepper, paprika. On a sheet pan with a rack in it. Flip once.

Then I take them out, dunk or toss in the buffalo sauce and raise the oven rack and put them back in under the broiler for about 5 minutes.

And I LOVE buffalo wings, altho I do some other wing recipes this way too. And they come out nice and crispy.

We had mock burgers on homemade rolls, all the fixings, fresh tomatoes from the garden and some spicy coleslaw. I used dragon peppers.

Love everything but the "mock" ;)
