I have been enjoying the only benefit of global warming, which is great farmstand tomatoes in the middle of October!! In celebration, I am eating this side dish every night until they are gone.

Thick slice of fresh tomato. Spread with pesto. Add thin layer of fresh mozzarella. Garnish with balsamic glaze. So yummy. Goes with everything!

Once the real tomatoes are gone, I guess I'll make a pot roast to celebrate fall.

I never was a fan of avocados, but lately I am acquiring the taste it seems.

We had stew today, and it was rather yummy. Kale simmered in a veggie stock, then added carrots, parsnips, lots of garlic, kefta spice mix, a can of black beans at the end as a meat substitute, some hot tabasco oil we made recently.

i'm learning to like avocado on a sandwich. i wanted to take my wife to a cool sandwich place tonight, and that was the best vegetarian option for me. i'm hoping that vegetarian cold cut technology improves in the future so i can have more options. right now, i go with a brand called Lightlife at home. their vegetarian hot dogs are great. their vegetarian cold cuts need a bit of work, lol. i'd rate them as passable.

your stew sounds pretty good.

frozen leftovers from this dinner :

salad
Amy's spinach pizza

non-salad part : one minute in the microwave, and then five minutes at 400F on a cookie sheet. i have yet to find a pizza that isn't better than fresh when re-heated by this method. even lousy pizza gets better.
