What did you have for dinner? -Part dois

Pasta with broccoli tossed in garlic, parm, evoo.

BBQ chicken pizza and bananas for dessert.

frozen leftovers from this dinner :

non-salad part : one minute in the microwave, and then five minutes at 400F on a cookie sheet. i have yet to find a pizza that isn't better than fresh when re-heated by this method. even lousy pizza gets better.

I prefer a minute in microwave and then a few minutes on a preheated pan. Roughly the same effect, I'd expect.

fake cheeseburger w/ lettuce and light mayo
fake nuggets w/ BBQ sauce

My daughter had to get her bottom brace bracket yesterday so she got to choose and she chose sloppy joes with tater tots.

We just use a simple recipe - ground beef with a mix of mustard, ketchup, and brown sugar. Ended up making little joe sliders on Hawaiian slider rolls and they were pretty dang good.

Crock pot bar-b-q pulled pork sandwiches, german potato salad, home made baked beans...blackberry cobbler

God, I hated braces. So glad I'm done with those.

I feel so bad for her, these are only her 'phase one' braces so she has a long way to go. Her teeth are really jacked up though so it'll be worth it in the end.

Wishing her the best. I never had bottom braces, but I had to get top ones because I used to have a gap, and I had one tooth that was like sorta behind my front teeth. So it slowly got pulled in place.

two light life hot dogs on a sesame seed bun with mustard
morning star nuggets with honey.

my wife has always given me **** about honey as a dipping sauce for nuggets, even the real ones. i still think that it's the best.

what are your veggie stir fry ingredients, including spices?

I try whatever suits me at the moment, but mostly, ginger, snow peas, onions, bell peppers, bok choi, mushrooms, sometimes tofu. A good soy sauce, spicy sesame oil, cane sugar, all to taste.

Not-Sushi

I've been threatening my family I would make this for years, kept saying I wish the served these near us because I'd eat them all the time and they would too (they don't let us eat sushi that often). After years of them ridiculing me, I finally made it last month, and re-tried this month and got it mostly right. They ate it like they were starving.

Lean Korean BBQ marinated/grilled Pork strips
Avocado
carrot
cucumber
Sushi rice with the typical sugar/vinegar mix
Soy wraps (instead of nori)

Drizzled with Eel sauce and sesame seeds

side of wasabi and pickled ginger

BBQ I think was unnecessary, the eel sauce, wasabi, ginger was plenty of kick, and I think I'll just try imitation crab leg next time for the filling to save time. Subtle works better for sushi I feel. Took me 1.5 hours..so tedious for me. And the soy wraps were a PITA to find. So a success on taste and look, a minus on time and hard to get soy wraps. Only good thing is I'll use the BBQ pork leftovers (3/4 of it) for Banh Mi tomorrow, same veggies just need french bread.

Smithfield spiral cut ham, large cut diced potatoes and carrots w/onions ( baked), cranberry sauce, salad

Tuna with Indian curry sauce. Whole wheat bread. Bananas and See's chocolates for dessert.

Pizza (pepperoni mushroom; the other, chicken/sausage/onion/pepper) and buffalo wings.

Think I'll make some bacon to sprinkle over the leftovers today..

You made me hungry for kale salad, so we are having that with a onion and balsamic vinaigrette. We are also trying some cauliflower pancakes.

Fresh kale in a salad is the way to go! Baked kale chips are pretty darn awesome as well.

The dinner plan tonight is salmon with carrots but i'm going to try and make a sauce for the salmon from some lingonberry jam. Fingers crossed.

four cheese rice
vegetable egg roll w/ sauce

The lingonberry sauce actually turned out really good but I just need to make it more of a glaze though so that it sticks better. I was so worried about how the sauce would come out that I ended up overcooking the fish. I'll chalk it up to a learning experience.

Made a chili and cornbread casserole with fire roasted tomatoes and red peppers. :) Yum.
