What did you have for dinner? -Part dois

I had the grandkids over today. We watched football, and I started cooking last night. I made an apple pie and we had that after we ate today with a scoop of vanilla ice cream.
I made a lot of chicken wings, a homemade rub, a new recipe I tried, it was good, and homemade barbeque for half the wings, and buffalo for the rest. Celery sticks with ranch or blue cheese. Pretzel bites with mustand or cheese sauce. Homemade guacamole and tortilla chips. Actually, my hubby made the quac.
I also made homemade coleslaw today. It went well with the buffalo, very hot and spicy chicken wings.
 
I tried a news pizza recipe. Actually, it is just putting things together.
Low carb flour tortillas, 3 for each, layered with Moz, pesto, Italian cheese mix, fresh tomatoes. Baked in the air fryer for about 8 mins. It came out great and, since I used parchment paper liners, no mess to clean up.
 
Here is my preferred method to break screen coma (use only for situations in which the child repeatedly shows no response to his / her name.)

1. Silently sneak up behind child
2. Contort your face into a wide eyed expression of comical, maniacal joy
3. Slowly insert your face upside down from above between the child and the screen while maintaining the expression

That has gotten a response for me every time.
Both my babies like to eat in front of the microwave and pretend they're on the tv. I get behind them and make faces, wear hats, smear my lipstick, applaud. My best response from them is when I talk like the Tiny Chef.:giggle:
 
Now that both kids are off to college, I'm having a hard time finding the will to cook decent meals for two. Also, I'm having a hard time scaling down. Lots of hot dogs and Braunschweiger sandwiches lately. Otherwise, leftovers die a slow death in the fridge.

Any suggestions? Easy, one-pot stuff for two with no leftovers would be ideal.

No fish. Shrimp is OK.

Sorry, I'm doing the opposite...making big batches of soups, stews, casseroles, etc and freezing them so I dont have to cook all the time later. Just defrost leftovers and since I made it to my "order," it's stuff I like.
 
Tonight was "breakfast for dinner." New recipe "sweet potato egg casserole." I went looking for healthy recipes, since I've loved the chile relleno casserole and it freezes so well.

It's not easy finding healthier casseroles that arent full of creamed soups, potatoes, croutons/bread, loads of cheese. I love hash browns and other potatoes but decided to go with sweet potatoes.

This one also has breakfast sausage, onions, and green bell pepper. It called for 5 cups of diced sweet potato and I went with 4 cups and added a red bell pepper. Still a HUGE amount of sweet potato :D. It was good tho. Held together with an egg and milk (not cream) and cheese mixture. Also super easy, just a lot of chopping up front.

It's very nice; good comfort food. I added a layer of cheddar that browned nicely on top. A little on the bland side for me, I'd probably zhoosh it up with diced chiles, chorizo, etc next time but I've also found a Mexican breakfast casserole that I think I'll try next. Anyway...7 more meals out of it! :) Pass the Tabasco!

When we used to go camping, we'd freeze a ham steak. In one big no stick fry pan we caramelized some fresh yellow onion, added pieces of the ham, added canned small peeled new potatoes, let it all meld. At the very end, added a can of snow peas, they mush up if added any sooner.

Sometimes before we left, we'd throw a corned beef in the crock pot overnight, cut away any excess fat. We'd buy some fresh Korn's Rye from a Jewish deli and have corned beef sandwiches for a couple of days.

I pretty much cook the same things, but cut recipes in half. Also, I don't make my own tomato sauce any longer (find Rao's is better anyway..) and can afford fresh ravioli when not serving a big group; and buy smaller cuts of meat. Grill a lot, big fan of sautéed anything. I'll still make the occasional pot roast, and freeze several portions.
 
Had to have something ready for my wife in less than 20 minutes, so it was pizza. I did a very good job putting that thing in the oven and taking it out during the correct three minute window. And thus, the day is done and the battle is won.

Rao's is good quality if going with store-bought. I got a great deal on their frozen lasagnas a while ago and bought several.

I've been buying their eggplant parmesan from Costco. Costco used to have another brand of eggplant parm that was really good, but it was discontinued.
 
I made a new recipe tonight from a meat cookbook. It’s called Carbonade a la Flamande, a Belgian beef stew. It came out amazingly delicious. It’s basically just stew beef, a lot of onions, beer and flour as a thickener. It’s served over wide Amish noodles. It’s definitely on our to do again list. Not wanting to waste any unused beer for the recipe I forced myself to drink it.🤣
