went to a good Thai place near our house.

Tonite is crock pot garlic meatballs in my wife's home made tomato sauce, home made toasted garlic bread, Italian green beans, and salad ( lettuce,tomatoes,black olives, mandarin oranges,carrots, crushed walnuts )....home made cherry cobbler for desert......quite simply, my wife is my best friend ( 56 years ) and a great cook,as well as the family rock..I'm a very lucky,grateful man.

that is awesome. the meal, as well.
 
I went out to take it out of the smoker with him, since his outdoor light wasn't working for some reason. The chicken had been in for quite a long time, was indeed crisp on the surface but juicy inside.

The wife has had a pork shoulder in our sous vide for a couple days now, so that'll be dinner. No idea on the veggies. Probably this thing I do with beans that probably doesn't qualify as re-frying them, but seems to have the same net effect. Maybe rice. Those go well together.

Dinner 1 (both)

Another round of the bean paste, this time: 1 can black beans, 1 can kidney beans, ~1/2 cup bone marrow gloop (broth, chilled), 1/3 cap red wine vinegar, few dashes of light soy sauce, spices: whatever that little spoon I have of red boat salt (scraped from sides of anchovy barrels, I think. Super-pungent and like fish sauce), cumin, coriander, red chili flakes, chili powder, paprika, onion powder, garlic powder, lemongrass powder, ginger powder, cinnamon powder, MSG....quantities varied. Heated for a while and whipped over 25ish minutes.

1 dry cup Farro (chicken broth + bone marrow gloop)

2/ea italian sausages.

Whipped beans went over farro in a bowl. Sausages on a plate (ie, so mustard and stuff could be used separately from the farrow-bean 'stew'-like thing).




Dinner 2 (me)

1 cup dry farrow
1/2 cup black beans
not as many spices.




What I was hungry.
 
my father in law took us to Cracker Barrel.

mashed potatoes
mac and cheese
carrots
corn bread
biscuits

it was pretty good.
 
Monte Cristo done the new French Toast way......first time ever.....I have been avoiding it but The Wife Wants What The Wife Wants.

It was not terrible, but it surely was not up the the snuff of the battered, fried and then dusted with power sugar version that I only eat once a decade or so now that I am diabetic.
 
First time trying an Alfredo style sauce, used Italian Sausage, mushrooms and served it over a really good mushroom cheese stuffed ravioli.

Pretty much the above last night....except instead of sausages, the ground beef, onion, green pepper, mushroom, chilis fry-up I often make with a ton of superhot chilis for lunches, but without the super hots this time.



Edit: I'm seriously liking the combination of whipped beans and farro.

Dinner 2 tonight: Pizza.


- pepperoni, mushroom, extra cheese
- "blackened grilled chicken, sausage, garlic, tomato, onion"
- 30 buffalo wings, and hopefully it's in the method they started doing recently - the sauce is all in the batter, so they're crispy without a trace of sogginess but also taste properly like buffalo wings, but there's more buffalo sauce for dipping, too. Before, the place made them mostly crispy, but the sauce tended to sink in a little as driven over, and was noticeably soggy if you microwaved it the next day. These were crisp and buffalo-coated last time. I wonder if it's what would happen if you deep-fried them then baked them a bit. No idea, of course. Baked wings just don't seem to come out the same at home, and we have no deep fryer nor do I want one.




The point is to have leftovers. No way can we eat that in one go.

Cracker Barrel is our go to place for breakfast. It is one of few where I can get turkey sausage, real maple syrup and real butter. I love the Mama's breakfast which includes 2 buttermilk pancakes, two eggs, and choice of meat which mine is turkey sausage. You spread the butter on the hotcakes and pour the maple syrup over them and then place the two eggs on top. When you cut into the eggs the yolks ooze out onto everything making it yummy delicious. I can never finish it but I leave very content.


Yesterday I made a great meatloaf and something I haven't made in a long time, scalloped potatoes. For a veggie I had steamed carrots an peas.. Tonight we had the leftovers heated up in the microwave. It was good eats.


Today however, I had three very ripe bananas and decided to make a loaf of banana nut bread. I got the recipe off the Internet from Food Network.

The recipe called for unsalted butter but also called for salt in the recipe. I used salted butter and cut back slightly on the required amount of salt. It called for using butter to grease the pan and I used baking spray.

It was one of the best banana nut breads I have ever made. I think the key is the call to toast the walnuts before adding them to the batter. After removing it from the oven, it had a slight thin crispy crust that is full of flavor while the inside is very moist. The toasted walnuts infuse all kinds of flavor. It totally rocks.

i probably need to eat more eggs / other forms of protein. since becoming a vegetarian, i have to plan protein pretty carefully.

that banana nut bread sounds pretty awesome.

I've been doing banana bread lately. Pretty easy. One with chocolate chips for my daughter. I add maple syrup and cinnamon and cut down on the sugar. Honey as well. The last one I made was just under done in the middle. Like a pudding cake, really good.

OK, we finally did have the kielbasa for dinner. I served it with pan fried peppers and onions, mashed potatoes, and mustard horseradish sauce on the side. Bananas and black forest ice cream for dessert.

Simple chicken: whole, with some lemon halves, thyme, and rosemary instead of stuffing, higher heat (435...for some amount of time; the wife did it this time).

Very crispy and juicy.
