What did you have for dinner? -Part dois

Broccoli salad with roaster walnuts, homemade flatbread.
 
I grilled: 4 large sweet Italian sausages, ~1 lb large shrimp, spiced.




I'll save the fruit & veg for tomorrow morning.

Going to be some bacon cheeseburgers. It's from the supermarket, not the butcher, so it'll be more like medium.


(Contrary to advice, I like a medium rare burger if I trust the place)

Have you ever had vegetarian chili on Fritos? It is really good. If I have time, I'll post the recipe tomorrow.

2 cans black beans
1 can tomatoes
1 can northern or kidney beans
1 can whole corn
1 sm can tomato paste
1 sm can green chilies, chopped
2 small zucchini, diced
for a more meaty texture, dice up I large eggplant
2 lg onion,chopped
lots of fresh garlic
jalapenos, diced, to taste
1 ½ cups water or veggie broth
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon salt
shredded cheese

of course all spices and peppers are to personal taste, simmer until veggies have desired tenderness. Tastes better the next day, can be frozen for later use. I don't rinse or drain the beans; makes for a thicker consistency.
 
Yeah I might have to try something different. I tried making pesto with my blender before, but it turned into grass soup. I know a chef, and he kept telling me the only way to make it good is with a mortar and pestle- he said there's no substitute for hard work. I used to just buy the bottled stuff and add more cheese and fresh chopped garlic into it to give it a bite.

Actually, I have found that crushing the leaves with a rolling pin accomplishes pretty much the same task with less effort, and then pulse blending it in a food processor.

An Italian friend of mine cooked me some sweet Italian sausage the way his Italian mother made it, and it's pretty amazing.

Essentially, all it is is he cuts sweet potatoes and white potatoes into 1" cubes and tosses them in olive oil, salt and pepper (enough to cover the bottom of an 11" cake pan in about two layers) and then broils them and half way through he stirs them and adds the coil of sausage to the top of the potatoes to broil until the potatoes are finished.

There is a mysterious alchemy that takes place between the sweet and white potatoes and salt and pepper that I had never experienced before that is pretty amazing. it is now my favorite potato dish with or without sausage. When I make the potatoes as a side dish I will sometimes add in some turnips, but the sweet/white pairing is the headliner.
 
Tonight, shrimp cocktails with fresh red pepper sauce, broiled halibut steaks with hazel nut oil dressing after cooked, sweet Hungarian paprika before cooking. Fresh blanched spinach salad with split almonds and blueberries, a vinaigrette dressing, already cooling in the fridge. Small sides of crisped sweet plantains, air fried in the toaster oven, no lipids. Tall alcohol free real cherry lime rickey's (Foxx's real Cherry syrup, doesn't need additional sweetener). Lots of crushed ice, and a Sodastream doesn't hurt. Entire meal about 650-700 calories, mostly from the hazel nut oil and plantains, low sodium, no added sugars beyond the Cherry syrup used sparingly to color the lime rickey's and take the edge off the lime.

Not familiar with Longhorn, but I'll easily accept your judgment.

Here is gastronomic NYC, introduced at the 1963 World's Fair, we had Tad's $1.99 Steakhouse. A few years later, my father returned home from one work one day with 8 half off dinner coupons from Tad's, one for each of us. The next evening we indulged. After the first bite, my father took us all to a nearby White Castle. My mother declined the doggy bag, saying she didn't want to insult the dog.

For years, Tad's held a prime space at Times Square in Manhattan, always busy when open. My guess, junkies and arlchies had no idea what they were eating and didn't care. The place had heat in the winter, AC in the summer.

It was a 15h workday so.....random stuff.

A couple thick slices of this super-dense russian bread, toasted and w/ over-very-easy eggs on top. Beef jerky. Etc.
 
Grilled Omaha Steak filet mignon,fresh asparagus.twice baked potato with cheese,and Caesar Salad.....Homemade cherry cobbler for desert.
 
My son had this crazy idea that instead of the usual dinner food, we eat close to half a gallon of chocolate ice cream.

Like a fool, I said yes. :doh
