What did you have for dinner? -Part dois

Roast turkey, stuffing, gravy, mashed potatoes....frozen dinner. New York Super Fudge Chunk ice cream for dessert.
 
Jambalaya with barley instead of rice, home made, first time. I got the recipe the way I described in this post yesterday. And yes, there were recipes for making it with pearl barley. It freezes better than rice. I also made my own Cajun seasoning mix, sticking with traditional mix recipes.

It took a ridiculous amount of work to make. Luckily...it came out really good! The barley came out perfectly, not mushy. I used diced pork loin (instead of diced chicken...cant tell the difference with all that spice) and andouille sausage and left out the shrimp. Still a very meat-heavy dish. Next time, I'll substitute carrots (heresy!) for some of the sausage. It really needs more vegs.

Not too hot but probably more than many people would prefer. I didnt add hot sauce while cooking, I had a good bit of cayenne in the Cajun spice mix. I did add some Tabasco when eating...for a bit of heat and a vinegar tang.

You are putting something that smells like a mixture of unwashed feet, sneakers and cow patties in your mouth?
I prefer a ripe Limburger with oil and onions any day. But of course they haven't come up with a salad dressing of the sort...yet.

Not only that, I'm allergic to mold so I react to it.

Folks in France were trying to convince me to try the best ( le meilleur iirc, my French has since been lost in translation )
blue cheese.
It is just as well. I have had numerous southern ladies assuring me that their recipe would convince me that grits are eatable.

Never caught onto the 'magic' of grits either, sweet or savory.
