Because you have to take it out of your holster at some point. At that point, you've raised the likelihood of an accidental discharge considerably.
I want to restate that my whole argument does not apply to people who have a meaningful reason to fear a likely attack, but that's why I brought up the vest test. How much danger are you actually in at any given point in time? If you're pretty much not in any danger at all, then the argument for carrying it hot, that you could be attacked at any second, seems less meaningful.
All ranges require guns unloaded and pointing down range. Everyone knows the safest place on a gun is behind the muzzle. What does that have to do with a holstered weapon?
