There is an easy way to define a BIGGER creature (beyond hunger) on weather or not it is gentle or not. (i would argue that ALL creatures are gentile, some just less than others) If a creature would choose NOT to step or kick another creature just because it walked in front of it. Like a horse that CHOSE not to step on you after you fell off of it and fell in its path. Or a human that CHOSE to stop his own foot because a scared cat darted in front of it. Or a elephant that CHOSE not to step on a snail..... (if only it could see it.....)

Bears are very gentle (when they are not hungry)

So how to we determine how gentle a creature is when it is smaller?

We let it bite us. The harder it bites us when it wants to escape, the more ungentle it is. Thats how pets developed.

Thats why we hate viruses, they have no negotioation.

The only way to help somethign smaller than us to trust us is to let it bite us, and not punish it. OR be VERY astute to its personal language. Like an elephant that can talk philosophy. (otherwise the birds will just land on your back)
