Well you're using Lewis trilemma. There are more than enough critiques of this, but, like Ehrman said, there's a fourth option - legend. There's even been a fifth option proposed of a guru. Look up Beversluis' work, too. Even that slimy weasel WLC says this isn't a sound argument for Christianity. Of course, this blindly assumes he even exists and that the NT is a reliable source of information - I'd dispute the second before the first premise.

Here's a direct proof of the resurrection. 11 people were witnesses to it, and all died in extremely painful ways for something that, if it were not true, would have been known to them to be false. 11 people all choosing to die for something that they all knew to be false is highly unlikely.

Well, couldn't have said it better myself: "Why 'Dying for a Lie' Won't Fly".

Even if this argument withstood (it doesn't), you even admitted that it's unlikely, not impossible.
