They want a drink or something quick, perfectly reasonable, but not a pizza or appetizer.

I've worked in food, serving and managing. If you want to have more time in the evening, schedule your closing time earlier. "We Close At 10 PM" doesn't mean "Everyone Goes Home At 10 pm".
