What did you have for dinner? -Part dois

Since quarantine my wife has been a maniac in the kitchen cooking up all kinds of stuff multiple times a day. Lat night was lasagna, the night befor Pad Thai. This morning for breakfast it was bagels and lox.

The situation sucks but I’m eating very well. Will probably put on a few pounds.

I have had some of the lean cuisine frozen dinners and I feel your pain.

It gets rough having to do with what you have to avoid too many trips to the grocery store. Tonight we are having perogies casserole. Three cheese frozen perogies, a can of Campbells mushroom soup, a half a soup can full of milk, a frozen veggie of your choice placed in the casserole dish and topped with the shredded cheese of your choice. bake at 375 for 50 minutes. You can add whatever you want to it to make it the way you want it. Tomorrow night it will be Tortilla Soup. Something one could make vegetarian style or not. But most of the ingredients are in the canned good/Mexican food aisle.

Yesterday we were finally able to find yeast. Tomorrow I want to make big pans of cinnamon rolls for not just us but for our wonderful neighbors.

Papa Murphy's. We broke self imposed quarantine for the third time in three weeks but while the Bug is big in the next county over it is only just now getting here. They did a great job, and man it sure does taste good.

I doctored it up of course, now it is massive, at least two meals and a snack.

We are eating and drinking well into the Apocalypse.

It sucks because all the restaurants have closed, even fast food joints like BK are only open till 5pm. I dont mind cooking, but I do like to have the convenience of having a sit down meal. Oh well.

Anyway a Korean grocery remained open and I felt sorry for the owner so I bought kimchi from him. I also grilled some chicken and made potato salad, so we had all three for dinner. Mango and graham cracker flavored ice cream for dessert.
 
Lox (smoked salmon) with onion and Philadelphia cream cheese on toasted bagels.
 
Mashed taters and rolls. My dog got the Salisbury steak, and went nuts over it.
 
Tonight, a variety of weird finger food:

small baked onions stuffed with a mixture of chopped walnuts, bread crumbs and a touch of kosher salt;
small baked tomatoes stuffed with feta cheese and marjoram;
biscuit wrapped asparagus pieces with mushroom slices and a bit of fresh mozzarella;
fried corn bread mini scones flavored with unsweetened cocoa and filled with stewed jalapeños;
chopped turkey breast sliders with raspberry onion stuffing;
baked artichoke heart halves stuffed with stinky gruyere;
thick slices of zucchini toasted with maple glaze;
steamed small cabbage leaf rolls stuffed with whole shrimp, grated horseradish and bean sprouts;
steamed spinach leaf rolls stuffed with mashed salmon, peanut butter and toasted bread crumbs;
baked small green apple halves stuffed with bacon and mascarpone;
mini buckwheat rolls with pepper jam centers;
steamed large pasta shells stuffed with black beans;
lots of iced tea flavored with blueberry juice and no need for dessert. No room for dessert.

The grandkids stuffed their faces, and grandma can't stop burping. No leftovers.
 
Had 'no contact' delivery today from a local Diner. Had fish and chips (fries) and smothered crispy chili rellenos. Ordered a vanilla milkshake too, been many years since I had one, but put it in the fridge for later.

You make me feel guilty, Helix. We had chicken fried chicken, mashed potatoes, and grilled corn on the cob. Of course, plenty of thick, artery clogging white gravy dumped over the chicken and potatoes. Desert was a double dose of Crestor. ;) :peace

I picked up take-out from our favorite little Mexican restaurant (Chimichanga and Chili Relleno). There was a lot, so we have two day's dinners.

I saw a Beer Bread recipe (on facebook) which I'm going to try soon. Recipe: 1 can warm beer, 3 cups flour, 1/4 cup sugar. Cook at 350 degrees for 40 to 60 mins. It didn't say what to cook it in, so I'd assume a greased loaf pan should work.

sounds like a real feast. i'm looking forward to a big one when my stomach gets better. we've had a lot of stuff going on lately, and continued stress and activity sometimes reduces my appetite to almost nothing. generally only lasts a couple days.
 
I made a quick (90 minutes) pasta bolognese with beef and pork and served it over whole wheat pasta to be healthier. I should have bought greens to make a salad but I forgot.
 
Tofu tacos. Yup. I drained the tofu really well, then marinated it with cilantro base and some hot sauce overnight,fried it off real crisp. Served in a crisp taco, topped with lime cream.
 
Sea scallops sauteed in olive oil with roasted red peppers, scallions, garlic, etc. served over whole wheat linguini.
 
A burger with fried onions, fried red pepper, swiss cheese on toast with a little ketchup. Yummy.
