Had some pineapple fried rice, and vegetable lo mein last night....take out, place called Shanghai Inn, not bad...


Gonna do a chicken (for the wife) & shrimp (for moi) stir fry tonight trying one of them P.F. Chang sauces that just came out..We bought a few bottles and are doing various stir fry all week... I'll update with a critique...

So, I did the Mongolian sauce (for beef) and the Sesame sauce (for chicken and shrimp) by PF Chang.

Not impressed.

Have never been to a PF Chang's so I can't tell you how they compare to their in store creations, but I can say I've had and made better.

I like Kikkoman's new (er,...ish) line of sauces much better. They hold up just fine in a pinch or for the culinary challenged.
 
Steamed, fresh, jumbo shrimp. Drawn butter and lotsa Old Bay seasoning.....don’t get no better than that........
 
Grilled veggies with spicy hummus again. Fast, easy and good.
 
We had tacos. I fried ground chuck, put out chopped lettuce, tomatoes, green onion, olives, cheese, avocado, sour cream and salsa. We usually heat up soft tortillas. But, because it was 90 degrees locally today, we used the hard taco shells (for less time in a hot kitchen). It was good. We can polish of quite a few of that kind of tacos.
 
Grilled lemon shrimp and scallops, pasta with chopped black olives and plum tomatoes. Some black pepper. A bottle of chianti. Table grapes and buratta for dessert.

Don't throw out your leftover pasta. Sautee in some butter, along with some garlic. Top with Parmigiano-Reggiano, nothing else will do, et voila.

Never any leftover. I cook 2 ounces dry per person. 1 1/2 ounce each if fresh made and not dried. Portion control. I never serve pasta with butter, olive oil when con figlio, occasionally a bit of walnut oil. Irish butter is reserved for Sunday morning toast, occasional egg dishes, adding flavor to blanched or crisped veggies on occasion, fresh baked cookies and some breads.

A restaurant I used to frequent, now moved to Rome, had a house dish. Fresh pasta tossed in a wheel of aged 20 year Parmagiano-Agrionno from the salt caves of Ischia, made Reggiano taste dull. A few olives on the side. Served with a couple of glasses of sweet grappa and nothing else.

cheese pizza; 1 slice regular, 1 slice deep dish.
 
Rendered down some Brisket and Ribeye fat in a frying pan over low/med low heat, tossed the chunky bits.
Added Asparagus with garlic, pepper, red pepper flakes and later a squirt of lemon juice. Just let that cook on low for 25 min or so as I prepped and cooked the fish.

Main Dish was Alaskan Rockfish, baked with butter lemon garlic and a sprinkle of paprika across top Baked at 375 for 10 min then low broil till edges crisped (about 3-4 min on top rack)

CHICKEN THIGHS BRAISED IN TOMATOES



12 chicken thighs (bone-in, but skin removed)
2 cans of whole plum tomatoes, crush roughly by hand, with chunks remaining to make
it look rustic (I used no-name brand)

10 cloves of garlic (at least), smashed and pounded
onions
parsley
olive oil



1. Saute garlic and onion in oil until garlic is golden.
2. Add tomatoes, and bring to boil.
3. Add the chicken, and make sure everything is in tomatoes. Bring to boil. Lower heat to simmer for about 30 minutes, or until chicken is cooked.
4. Remove chicken from pot, set aside. Continue to simmer the sauce until it is reduced.
5. Put the chicken back into the sauce and stir. Add the parsley and stir.
Remove from heat immediately so the parsley doesn't get overcooked.

6. Serve with mashed potatoes or pasta.


*I grated Parmigiano Reggiano onto it.

We had falafel burgers. So the falafel came out a bit flat, so why not use them like patties? I made some tzatziki as a spread, fresh tomato and cucumber slices, shaved onions on the side. I like naan bread for just about anything, so we used those as bread.
 
Toasted steamed codfish cakes made with crushed wheat berries and cornmeal, braised carrots and sliced turnips in the cod broth, fresh grated horseradish (smoke still coming out of my eyes), snap peas with red bean sauce, cucumber and beef tomato slices. Iced black tea kissed with orange liqueur.
 
finally tried the Impossible Whopper tonight. i've been looking forward to it all week. it was quite a bit like a regular one, but i didn't think that they gave me the wrong sandwich or anything. i was always a McDonalds person and wasn't much for Whoppers, so i actually liked this one a bit better than the real thing. it's also better than their veggie burger, which has been my go to road food. only downside is that it's more than 600 calories, but i countered that by not getting a side. i also liked that it wasn't overly greasy. i'll definitely get another one assuming that they keep selling it.
 
Meatloaf, mashed potatoes, collard greens with pepper sauce, black eyed peas with jalapeno peppers, sliced tomatoes, couple of pickles and finished it up with a slice of key lime pie. Oh yeah, a glass of vitamin water because I'm watching that waistline.
 
We tried some Serious Bean Co Sweet & Smoky Chipotle Pinto Beans With Tomatoes from a can, and liked it. So I tried making it myself, just a bit more of a kick to it.
Onions, jalapenos and garlic, sauteed
Chopped smoked jalapenos in adobo to taste,
black beans
we topped it with cilantro and green onions, a dollop of sour cream and a spritz of lime.
Works great in a tortilla, or you can stretch it into a soup using veggie broth.

Steak burrito and a deep fried chicken taco at a new Mexican place (that opened at the mall annex near my house).

I had a Smirnoff Moscow mule with my meal, and at the end of it the waitress winked at me and crooked a finger, asking me to follow her. Bemused, I got up from the table and did.

The next thing I knew she brought me into a hidden bar inside the restaurant- it was past the kitchen and even had a sort of steel door like a bank vault leading into it. Lots of women and high rollers. But I was with my son and told her I will come back next weekend to bring my friends along. Talk about a weird experience lol. :lol:
 
Left-over roast beef blade (we've been having tortillas for almost 5 days, it has to get used, or go - I cut in thick slices), which I braised in mushrooms and onions, and lipton onion soup powder/water/worcestershire sauce - uncovered for sauce reduction. Served with creamy mashed potatoes and corn on the cob.
 
had another Impossible Whopper, as i was on the road. i'm a fan.
