What did you have for dinner? -Part dois

Penn Station vegetarian sub w/ grilled veggies, teriyaki sauce, mayo, and provolone
small fries w/ ketchup

that was probably the best veggie sub that i've tried so far. i didn't even miss the cheese steak that i used to get there. i told my wife that we need to go to Penn Station more often.

road meal : crunch wrap supreme minus the beef.
 
Taylor Farms BLT Salad with chicken and an avocado dressing.

I tossed the T (yuck) portion of the salad out back for the mama deer to munch.
 
Pork ribs and pan-fried mashed potatoes, baby peas in butter and green salad.
 
Sous Vide some South Texas Ribeyes (round pork cutlets, about 1.5 inch thick... they're pretty good) 2 were done with a KC Dry Rub before going in the bag and 2 were a Brazilian steakhouse seasoned Spices, Seasoning, Recipe Ideas & Cooking Tips | McCormick brand stuff. Worked fine. AFter 3-4 hours at 135 I tossed them on the BBQ, just charcoal no smoking wood. Really good eats.

I'll post pics after I get off work, I have a pot of Spaghetti I've been working and tinkering with since 0800 this morning.
 
First I pan baked a simple cornbread with millet flour for crunch and about a dozen minced seeded jalapeños in a 14" round pan. About an inch thick, after cooling I divided into 4 quarters, covering each with a thick layer of a homemade avocado mayonnaise, a layer of thin sliced cucumber, then thin sliced sweet onion, thin slices of chilled papaya. Placed each slice on a large plate covered with shredded arugula, red leaf, and thick slices of ripe Azoychka yellow tomatoes and halved ripe plum tomatoes, sprinkled with fresh squeezed lime juice, assorted black olives and chunks of fresh mozzarella. 2 quart pitchers of well iced white Lambrusco sangria spiked with 4 shots in each pitcher of Puerto Rican white 120 proof rum. Long Island Iced Tea and fresh sliced chilled ripe peaches for dessert. 4 well fed and baked adults for dinner.

Dog enjoyed two ice cubes dropped accidentally per his expectations as I prepared the sangria. After an afternoon catnip treat, Roger the midget cat spent her evening ignoring the world, something she does well, lolling in the setting sun as she spread eagled on the living room window sill. My neighbors stumbled home down the hall, a bit more amorous than usual, which appears to be their favorite pastime anyway, much to the chagrin of their teenage daughters who have often told me I am a disgusting influence on their parents. As if they need my help?

And as if I don't know, those two have been out carousing with two of my grand nephews since spring started, probably earlier. Those two boys don't know it yet, but their lives and freedom are over. It isn't for me to approve, but I do. Their mothers, no, but so it goes. Fathers have no say in these things, even if they think they do. :)
 
What I am going to have for dinner, is a splurge for me. It's a grinder, from the local pizza shop, and Hopefully I can handle it, without any issues.
 
Something light: cream of mushroom soup, toasted Arabic bread, sun dried tomato dip, and a banana.
 
I've got an asparagus and jarlsburg soufflé about to come out of the oven, a simple green salad with cucumber and tomatoes, a garlic yogurt dressing. Iced tea. Chilled stewed plums over real vanilla bean homemade ice cream for dessert with Turkish coffee.

It's an Asian-based soup called Tinola.
I make this regularly because of the healthy ingredients in it.

I make mine with less water to make the flavor really intense.
Chicken drumsticks boiled in lots of garlic and ginger. I add cracked peppercorn, onions, yellow potatoes, and thick, yellow long peppers (can't recall the name).

About halfway to the chicken being done, I add medium ripe, or semi-ripe papaya - peeled and seeded, thickly sliced (not only loaded with beta carotene but also gives a hint of sweetness to the soup).
The recipe calls for green papaya (but I prefer the semi-ripe ones).
Btw, papaya is also a laxative.
When the soup is almost done (takes about 40 minutes), I add bokchoy, making sure they don't
get overcooked. Serve with steamed rice.

I use Thai fish sauce with lots of fresh lemon juice for dip.

Have you tried nouc mam, the Vietnamese fish sauce? I like it better than the Thai or Filipino versions since its milder and sweeter.

No. I'll look for it. I'll probably have to go to a huge asian grocery named TNT - but it's about an hour's drive from here.
 
Our dinner at Cappy's was quite delightful. If you're ever in San Antonio looking for a good place, I say eat here. The meal was stellar, start to finish.
