It's an Asian-based soup called Tinola.
I make this regularly because of the healthy ingredients in it.
I make mine with less water to make the flavor really intense.
Chicken drumsticks boiled in lots of garlic and ginger. I add cracked peppercorn, onions, yellow potatoes, and thick, yellow long peppers (can't recall the name).
About halfway to the chicken being done, I add medium ripe, or semi-ripe papaya - peeled and seeded, thickly sliced (not only loaded with beta carotene but also gives a hint of sweetness to the soup).
The recipe calls for green papaya (but I prefer the semi-ripe ones).
Btw, papaya is also a laxative.
When the soup is almost done (takes about 40 minutes), I add bokchoy, making sure they don't
get overcooked. Serve with steamed rice.
I use Thai fish sauce with lots of fresh lemon juice for dip.
Have you tried nouc mam, the Vietnamese fish sauce? I like it better than the Thai or Filipino versions since its milder and sweeter.
