What did you have for dinner? -Part dois

We had some grilled veggies,( olive oil, Moroccan spices), with Naan on the side.
 
two Thai spring rolls
1/2 serving Thai fried rice with tofu (medium spicy)
1/2 serving Pad Thai with tofu (medium spicy)
 
veggie burger
onion rings
 
A Caesar salad with seared scallops on top.
 
Well I just had me a nice big plate of ignorant people smothered in stupid sauce, with a side of WTF, and a cool glass of OMFG!
 
Taco Salad!

Lettuce, White corn, Black beans, Green peppers, Onions, Asiago cheese shredded, Fiesta blend shredded cheese, browned hamburger (Taco seasoning), Salsa
No taco shell bowl watching carbs!

We had pepper omelets with a black bean sauce. All rather spicy, but surprisingly tasty. A salad on the side. Lazy day and all that.

What do you use for crust? We recently made some with Naan bread. Easy, tasty and holds up well.
 
BLT's, with our homegrown leaf lettuce and tomatoes.

Very hot in San Diego today... we're not in the mood for a heavy meal.

yummy. I usually make my own sauce and freeze portions, ready to use. My favorite go to melting cheese is a bit more high calorie, but so versatile.

Saturday: bacon cheese burgers

Lamb cutlets (marinated with Worcestershire sauce. lime and rosemary) pan fried in olive oil. Fried potato wedges. Sour cream sauce with chives, oregano, cumin and garlic flakes. Fried mushrooms and garlic. Corn from a can.

I hope all you dads had a great Father's Day. I tried to make hubby's special. The kids and some of the grandkids came home for brunch. I fixed their dad's favorite breakfast. Steak (NY strip), eggs nested on an English muffin, grits, juice and coffee. I also made Belgium waffles with raspberries, blueberries and strawberries, real maple syrup, whipped cream to dress them up and turkey bacon. The grandkids went crazy over the waffles coming back for seconds and some thirds!

Of course the weather did not allow me to do the steaks on the grill because we have had downpours all day so I did the steaks in the broiler and they turned out great. Right about the time we were done eating the rain stopped and the sun came out. Figures. Anyway everyone seemed pleased with what they picked to eat as plates were clean when they returned to the kitchen sink. One of my grandsons asked "Grandma do you like to cook?" My response "I love to cook for my family".

There's a couple of steaks left over so tomorrow night we are having steak fajitas.
