What did you have for dinner? -Part dois

chili that we made with garden tomatoes
slice of cheese

leg of lamb stuffed with garlic covered with rosemary Tony Chachere's® balsamic and olive oil cooked hard and shedded made into BBQ with commercial sauce (Don't judge, it is very good) and cinnamon, with jalapeno and onion.

On Franz onion bun.

YUM

weisswurst, eh? I'll keep it in mind. I was going to say "I love a good sausage", but then the joke potential came to mind...

Was it, at least, tasty?

It was okay, I guess. Since it was boiled rather than grilled, I think you do need to put more mustard on it than usual.

apartment complex barbecue :

pulled pork sandwich w/ sauce
corn on the cob w/ butter
mac and cheese

the complex puts on events like this regularly, and the food is always awesome. this has been a great place to live.

Lamb Pot Pie : Leftover leg of lamb cooked hard, marrow bone stock 29 hours, mushrooms, potatoes, carrots.

Crust: Crisco/Lard 80/20 using mini alderwood smoked seasalts in four, cooked in Pampered Chef stonewear (wife bough....boy she likes to buy things.....I only use this for pot pie, maybe twice a year, the rest of the time it is in my way)

Yum Yum

heading out for a post-dinner walk soon. i like days when i get a high step count, and this one is going to be significantly above average. i hit 10k at about 2 PM.

Does it ever get easier? I know a guy who 9 years ago lost 120lb because the death of his dad scared him, he gaves himself one cheat day a month were he can eat whatever he wants no matter how much he wants......but he says it is never easy.

EDIT: He started once a week, then once every two weeks, and settled on once a month though these days only 2-3 times a year will he eat like he used to,,generally he eats somewhat well and feel good about himself for days.

We talk You see.

maintaining weight loss has been the most difficult of my lifestyle changes, because it's never complete. it's every day. quitting smoking was relatively easy once i found the right method. i put out the last cigarette, and i was instantly a nonsmoker.

as for "does it ever get any easier," i suppose that the answer is yes. once you do something for thirty days, and then sixty, and then a year, and then five years, and then ten years etc., it becomes the way things are. for me, it's calories in vs calories burned. i had McDonalds today, but i also had lean cuisine, and i'm currently at 21,763 steps. that's abnormally high for me, but i'm not regretting the double cheeseburger. tomorrow, i'll weigh in, and i'll go from there for the next week. i would also recommend staying on top of blood pressure and cholesterol. you can exercise your ass off and still clog up your arteries. it varies from person to person, though maintaining a healthy weight is a pretty big factor, IMO. i was pre-diabetic at 29 or 30. after a little more than a decade of paying attention to my weight, my blood pressure and blood sugar are pretty good.

cheat days? i generally do cheat meals, and i exercise more on those days. for Thanksgiving, Christmas, and my birthday, i generally have a pretty good pig out meal, but i don't eat everything i want all day long. i did do that once, and it didn't agree with me. also, when i throw out my back, i sometimes have a Red Lobster Admiral's feast. that's a funny story, lol.

hamburger helper w/ lean hamburger
French cut green beans

 ............. :toilet: ............... :eek:uch: ..................

 nah, wasn't so bad as that, lol. we're working our way through pantry items that are approaching their expiration dates.

Shrimp Gabardina

Large shrimp stuffed with Chihuahua cheese wrapped in
bacon sauteed in a tequila sauce served with bell peppers
and rice topped with a white sauce.

OK, I might as well explain everything since people wanna know.

The thing in the middle is either a slow roasted or deep fried pork knuckle (ham hock) called schwienshaxe. I don't know what happened to the other white sausage- either I was eating it or my friend was while I took the picture. The plate in the upper right is spatzle- small egg noodles in butter, the one on the lower right are fries. The beer we drank was to the side so you cant see it. The condiments include honey and spicy mustard, ketchup and mayo. There's also a gravy dish off camera.

Oh, I am due to meet up with my buddy again tomorrow night as we have a business dinner with some big shot he wants to introduce me to- and it will be held in an Irish gastropub at the mall near my place LOL.

If you ever make spaetzle at home and its not terribly difficult, just messy, try it with bacon and drippings.

Morning Star BBQ riblet
corn

Shrimp & Calamari over squid ink pasta with a garlic-heavy creamy tomato sauce; sauteed mushrooms & onions in there as well.

Carne picada with a nice salad. We'll have the rest of the meat as a Mexilly sandwich tomorrow.

Puerco Pibil on tortilla. It's basically spiced pork butt that's slow cooked for four hours. When it comes out it's so soft you can cut it with a spoon. Now I wasn't able to find Annatto seed so it doesn't have the right color, but it's otherwise good. My brother and I made this last week. On the taco is also picked onions we made

on the road dinner :

DQ chicken sandwich
onion rings

I'm having restaurant lunch leftovers. Roast pork, mashed potatoes and sauerkraut. Yum!

i made my first meat loaf tonight. that's kind of odd, since i cook somewhat regularly, and i like meatloaf. i put a ketchup / barbecue sauce glaze on top of it, and it turned out really well.

also made baked carrots and stuffing to go with it.

Grilled sausages.

I'll follow up with a salad or some sort of veggies later, but I wasted so much time here today that I had to work late........and then didn't feel like cooking with effort

grilled cheese
reduced sodium lentil soup

A pan fried 1 inch thick Walmart ribeye steak. Mashed potatoes with cheese and butter and bacon, and French cut steamed green beans. Good stuff.

Walmart while their meat is certainly not the best by any means does have decent cuts with good fat content. My first time pan frying a steak. Must say a lot easier than I expected. The secret is high heat and a dry steak surface to get a good crust. I have an electric range that will get the pan to a bit over 500 degrees. I did three minutes a side turning after 2 minutes and one minutes. My steak came out medium well. I like a good crust but like my meat medium to medium rare. So next time I will cook the steak straight out of the fridge instead of letting it get to room temp that way I can narrow up the gray bands and still get my meat to temp with a good crust. Only bad thing about pan frying is it will smoke the kitchen and house up. (Your doing it right if you get smoke.) I definitely see more steaks in my future. :)
