What did you have for dinner? -Part dois

Gonna be something simple. Breaded baked pork chops.

Think we have broccoli to sauttee or something. Though we don't have kids yet, so I often don't bother with veggies for dinner - I eat plenty fruit/veg during the day.

I am having the vegan "shrimp" po boy.

It is amazing.

Boneless Pork Loin Ribs basted at 250F for 3 hrs, with a dry rub and #7 Jack Daniels BBQ Sauce. Corn on the cob, baked beans and garlic toast. With a slice of sweet potato pie and whip cream.

He wanted to get smaller some years ago.

Only gets one cheat day a month I think he said...or maybe it was every two weeks?

I hope he makes that day worth it, I know two guys who did that plan and kept the weight off, I think the trick is to really enjoy off day.
 
A leftover super fab bone in pork chop chopped, onion, a full nicely hot serranno, a generous TB ketchup in Winnco bean with bacon soup.

Assorted spices were added.

Really nice.

that if you don't eat the real thing for long enough, the super low calorie version becomes a treat. the 80 cal buns leave something to be desired, though. i call them "goose food" buns, because that's what they're good for. i generally get a different kind, but that's what we have, so waste not want not. ;)

thanks! we just have to work on the crust a little. the outside of it was crisp enough to hold together; the inside was a little too moist, but was still good. considering that the crust is made out of ground up cauliflower and shredded cheese, though, it's fairly amazing that it tastes like pizza crust.
 
Dinner at Wingstop: buffalo wings, fries, onion rings, bleu cheese sauce, washed down with some Stella Artois.

It is the flour that makes it taste like pizza crust. I'm not sure the cauliflower would add much to it but the cheese certainly would. I make my pizza from bread dough. Basically I make an Italian bread dough and use that. 40% hydration with some salt and olive oil. I use cake yeast. It is like a bread crumb but with crustiness around the perimeter.

for some reason, the ground up, drained, and pressed cauliflower really does taste like pizza crust somehow. if we had done it perfectly, it would have been almost identical. i'm not sure exactly how that works, though.

Went to another restaurant:

Chicken katsu (deep fried breaded cutlet) with plum sauce, Japanese coleslaw, potato salad, miso soup and steamed rice. Washed down with cups of hot tea.

Leftover I Love Ireland Day corned beef on a Macrina Bakery Seattle rye that would have been better with double the rye, a great stone ground mustard , mayo (I know), raclette cheese.

Given that the corned beef is a low flavor variety it sorta works with the weak American version of rye.

Baked chicken tenders panko/parm breaded chopped up over a deluxe salad, with a twisted ranch dressing. My wifes ulcers are healing nicely but we are still on the healthy eating trail.
 
A scallop Caesar salad, a hunk of bread and a glass of SB.
 
Meatball Pizzza. Pillsbury pizza dough with homemade sauce, meatballs, and mozzarella cheese. Baked in a cast-iron pan. That was last night.

Shrimp and pasta...I could go into one of my signature long stories here, and it is a pretty awesome story too but some jeks around here have been pissing me off and I just dont feel like it, plus I just told a long story someplace. Anyways I had another very successful high profile catering today, this time for lavender cupcakes of all things, not my idea to be sure. Well anyways in my research which I do a good deal of because I tend to like danger and so I usually don't test recipes before I use them and I often amend them as I go because you see Hawkeye10 needs his fun, and challenge.....anyways I noticed some lavender shrimp recipes. And there are not a lot of lavender recipes let me tell you and it is not easy to work with and a of of the recipes online I, he who has never used it before, can tell that the recipes are sub-par. So me not being stupid decided that lavender shrimp is a thing. The wife wanted shrimp tonight so fine and at the almost last minute I decided to put lavender in it.

Would not want to do it more than once a year, but I gotta say it was good.
