    I made beef soft tacos for the family and veggie crumble soft tacos for myself. They were a hit, and we had leftovers to freeze.

    Made a simple chowder. 1/2 a package of frozen corn niblets (6 oz), 1/4 lb dried red lentils soaked overnight, a quart of water, 8 sliced mushrooms, 1 medium sliced carrot, 1 medium red potato cut into bite size pieces, 1 small sliced onion, a single stalk of celery cut into small pieces, 2 small yellow sweet peppers seeded and cut into small pieces, juice squeezed from 1/2 a lemon, some lemon zest, red pepper powder, turmeric and cinnamon simmered for about 45 minutes. Had about a 1/2 lb of leftover cod and 2 sea scallops already cooked leftover from last night. Cut up the cod into bite sized pieces, place 1/2 at the bottom of our two bowls, the same with the scallops. Poured the soup over the fish and scallops. Garnished with fresh chopped parsley and mint leaves. Served with black tea steeped with the remaining 1/2 lemon thinly sliced.

    I was going to make gumbo but I got involved in the Hunter, a new series with Al Pacino on Prime Video. I then went to Plan B which was Caesar Salad. It was excellent.

    Tonight maybe salmon on the grill but I'm jonsing for a big salad now.

    Thusrday I'm going to smoke a brisket. Maybe Tri-Tips. You get to play with fire and steel and the product is smoked meet. Mighty fine. I could smoke damn near daily. I might smoke some cheese for the weekend.

    vegetarian ham sandwich on some of the best pumpernickel bread that i've had. also Swiss cheese, veggies, and light mayo. my wife made mashed potatoes, which were great.

    Last night I made a pizza for dinner. Pepperoni, 1/2 lb of crimini mushrooms, sausage, sauteed onions, and fennel on a crust that I had cold fermented for 36 hours.

    I was going to make gumbo on Tuesday because of Mardi Gras but I couldn't find andouille sausage.

    I love Brunswick stew I make it in the summer with leftover BBQ from my little smoker.

    I'll get some andouille but I have to go to a butcher shop about 20 miles away They make their own. I make a simple sausage and chicken gumbo because I'm not a fan of shrimp and I cannot obtain fresh crawfish this far north.
