What did you have for dinner? -Part dois

I bought a 4 pack of mixed varieties of Greek yogurt after you mentioned that for dessert the other night. Tonight was Key Lime.
We buy various flavors of Yoplait, Key Lime from Chobani, and Kroger brand fruit at the bottom Black Cherry and Blueberry. We like to have yogurt in the fridge, a bit healthier dessert than when we have ice cream, etc. Greek yogurt can be a bit dry IMO, except the blended flavor like Key Lime. Tasty way to get some probiotics. :)

This was Chobani. There was key lime, red raspberry, lemon and vanilla.

I prefer iot to ice cream. If I put it in the freezer for 10 minutes it almost tastes like ice cream and I don't feel so guilty.

Grocery store was having a sale. So we stocked up and batched cooked.

Did a bunch of chicken breast and thighs, some in garlic and herb, others in western BBQ.

Ground beef was on sale so I made about 15 pounds of Italian meatballs and put in the freezer, had some for dinner.
 
Alas, I succumbed to the temptations of my best friend who is under a tremendous amount of stress caring for an elderly relative and accompanied her to the local watering hole where I indulged in a Caprese salad washed down with 2, count 'em 2, Long Island Ice teas. It's a good thing that the watering hole is walking distance from our houses.
 
I attended an "investors" meeting at a Japanese bar, so it was all pub grub: takoyaki (squid or octopus shaped in a batter ball and griddled), okonomiyaki (a kind of Japanese pancake with a bed of batter and cabbage, with cheese and meat toppings and tuna flakes on the top), yakitori (skewered chicken grilled on coal), and fries, all downed with lots of beer.

Been decades since I had a Long Island ice tea, they are good and super potent. Amazed you had two, lol. Kudos to you for being there for your friend.

There was an adult aimed joke in Boss Baby where the kid says something like "The people of Long Island do not know how to make an iced tea." I had to laugh.
 
Key Lime is one of the easiest to make. Maybe 45 minutes from start to finish. That hardest part is making the crust.

wife and i have a favorite restaurant on the southern outer banks which offers the best key lime pie either of us have eaten. here is the pie crust recipe their chef uses ... only he first scapes the creme off of the crackers for his version


Easy Oreo Pie Crust​

Ingredients
  • 14 oz OREOs
  • 8 tbsp butter salted or unsalted, melted

Instructions​

  1. Place cookies in a food processor and pulse until only fine crumbs remain.
  2. Drizzle in the melted butter and pulse several times until completely incorporated. You can also stir in the melted butter with a fork.
  3. Transfer the crumbs to the prepared springform pan or pie plate and press firmly into the bottom and evenly up the sides of the pan. Use the bottom of a measuring cup or your hands to really press the crumbs into the bottom and sides of your pan. [i inserted a twin pie pan instead of a measuring cup to compact the cookie crumbs; that technique worked well]

For No Bake Recipes​

  1. Refrigerate for 30 minutes until the crust is firm. Fill as directed.

For Baked Recipes​

  1. Follow recipe instructions. The crust does not need to be pre-baked unless the recipe you are making requires it.

I know that graham cracker is often a seen as being traditional but I like the pie crust personally. I've seen Oreo cookie baking crumbs in the baking aisle of my local store.
