What did you have for dinner? -Part dois

It's mixed veggies basically. My guess is during the Depression years, no one threw any leftover away. You just incorporated it into the next day veggies/beans if you were fortunate to have them. People today have no idea how the Depression left so many hungry and all the soup lines people stood in to get just one hot meal a day. You may not like carrots, green beans etc..................but if you are truly hungry you would eat them.
We still use up leftovers. Sometimes we call it a stew, soup or just that stuff.

We had an omelet for breakfast, so tonight it was a greek style salad with pita bread.

I know you are a vegetarian but do you eat seafood?
 
I had a pint of blueberries that needed used so I fixed blueberry pancakes for breakfast. There were around 15 to 20 blueberries in every pancake. Delish. But for dinner it is leftover stir fry from yesterday.
 
We had spaghetti, store bought sauce with sauteed mushrooms added. Gummy vitamins for dessert because why have them in the morning when you can have them as a snack after supper.
 
We had an 'egg bake' with diced onions, diced ham, diced bell peppers, sliced mushrooms, tater tots, and fresh blueberries/strawberries. --- Don't know what you folks in other parts of the country are getting, but this year, the strawberries are absolutely 'HUGE.' Some as big as avocados.
 
Made my first homemade "hamburger helper" from a recipe I found online and it was actually really good. Reminded me more of an old school goulash than a boxed hamburger helper type meal though since we added tomatoes and peppers. I liked that the recipe used beef broth instead of milk. Definitely will be making again!

We just had some strawberries, not as big as avocados, LOL, but pretty big, red and good for so early in the season. From USA.
 
I ordered roast chicken sub because I was too tired and sore after being discharged from the hospital just after noon. Tonight was a frozen dinner.
