What did you have for dinner? -Part dois

Taking care of my grands while Mom and Dad have a night out.....2 and 4 years old. So where do you go for dinner? E-I-E-I-O......that's what they call McDonald's! They don't ever actually go in, just get takeout, so we took them in and they were so excited. They got Happy Meals Grandad had a Big Mac and I had the spicy chicken thingy ....now I recall why we never go there! But the kids loved it and it
was fun...but not cheap like I remember.
 
I prepared Chicken stir fry full of veggies. Snap peas, broccoli, carrots, mushrooms, water chestnuts, and topped with thinly sliced green onions. served on a bed of jasmine rice. Preparing it isn't hard and goes rather fast. It is the prepping that takes so much time. The veggies have to be cut in a way that all will be done in a few minutes. I prepare the meat first and take it off the heat before starting the veggies because I do not want to overcook it. I also mix soy sauce and honey together to season the meat while it is cooking. Once the veggies are just about done, I put the meat back in and cheated by using a stir fry seasoning packet prepared as directed and poured it in the last minute or two. It was tasty. Hopefully there's enough to have it again tomorrow night but I doubt it. Hubby will have it again sometime tonight and likely it will be his go to for lunch tomorrow. So, I am planning on cooking tomorrow too.

Sounds delicious. I have been on a berry kick as of late They are considered to be super foods. I finished off a pint of red raspberries in two days for breakfast with yogurt. Delicious. SIL picked me up a quart of blackberries a couple of days ago. They are huge and sweet. But I have a pint of blueberries I need to use up first. Maybe blueberry pancakes for breakfast and freeze the rest for another day.

Nothing like fresh berries, especially if sweet. If not, sugar and heavy cream can always be added, lol. :p
 
A friend of a friend just opened a Japanese buffet place, and we were invited. Even though I was willing to pay he insisted on comping us so it was all free. I gave the staff a generous tip even though we grabbed the food ourselves and they just took the empty dishes away.

Endless grilled beef wagyu strips, shrimp and crab tempura, tonkatsu (deep fried breaded pork fillets), tuna and salmon sashimi, roast duck fillets and assorted grilled fish. Burp.

I skipped the carbs, so no fried rice, ramen, noodles, or fries, just doubled down on the salads, stir fried veggies, and fresh fruit. The desserts were pretty forgettable except for the crepes made to order.

Meanwhile I left my son at home. When I got back I found out he ordered 2 large pizzas and didnt finish a box, so I gave it to the servants. They were happy.
 
I followed a new recipe for pizza burgers. The concept sounded good, and the pictures looked good, but it was awful. It called for breading frozen hamburgers after dipping in egg. Well, by the time the burger got to the crumbs, the egg was frozen and it hardly picked any up. That's just the tip of the iceberg. Long story short, breading frozen hamburgers doesn't do much for the flavour, even with pizza sauce and cheese. Waste of ingredients, do not recommend.
 
There were plenty of leftovers for dinner tonight. That means I need to take out a protein from the freezer asap for dinner tomorrow. I would prefer to eat out tomorrow, but I have veggies that need to be used up. I hate to waste food. One is spinach and the other is asparagus. So ,I decided on mini meatloaves. Pan fried asparagus with some spinach tossed in at the last minute to slightly wilt. It would be a good time to use up the last of the turkey bacon, cooking it in the microwave till crispy and then crumble it on top of the asparagus and spinach. And while the oven is on, make scalloped potatoes which I would likely have to start before the mini meatloaves. And there's a lot of blackberries that need to be used up. While the oven is on what about a blackberry cobbler? If tomorrow was going to be a sunny day, the menu would be totally different. It is raining now and will continue throughout the night and all day tomorrow.

I can't count the number of times I have tried a new recipe or even my own concoctions have failed. Thanks for the heads up if I come across a recipe involving frozen hamburgers.
 
For dinner we had meatloaf, scalloped potatoes, asparagus. I did not need to use up the spinach as I thought I would, but, I was able to finish off the green onions. However, I could not bring myself to use those beautiful blackberries in a cobbler. The cobbler can wait until I have some not so sweet berries. The bad news is I spent hours in the kitchen on a Saturday making dinner just to save a bunch of asparagus from going bad. The good news is everything was very tasty. Hubby has put all the leftovers into the fridge and finished loading the dishwasher. Tomorrow's dinner is good to go.
 
Prime Rib beef patty on toasted Brioche bun with tomato, onion and mayo. French fries on the side and dill pickle spear. Dessert was York Peppermint Patty.
