What did you have for dinner? -Part dois

Yearly tradition. Reserved a dining room at the Broadmoor Hotel, and invited around 20 people I advocated for as a CASA back in the day. Had both Mexican and Italian buffets to choose from. Good to see some of the now adults again, and share their success stories from overcoming major adversities endured during the not so good times in their youth.
 
I made veg stew for that reason. Plenty to freeze for later.
I have 2 of the deli quarts frozen for easy meals later in the week.

Last night I made cream of potato soup. It wasn't until I was almost done that I forgot the bacon. I render bacon to use to sweat the mirepoix and then save the bacon bits for garnish with parsley and cheddar cheese. I was looking for the bacon for garnish and remembered that I used oil and butter from sweating. Yea, I felt like a moron at that point.

Meh, just call it a stand in soup and smile. We don't use bacon but find that miso paste fills in rather nicely, taste wise.

Half of my German family recipes start out with "render bacon, sweat onions in bacon fat". I knew better but I was in hurry when I started.

I'm not sure if I have ever had miso.
