What did you have for dinner? -Part dois

My wife requested ham sandwiches. I added cheese from a sampler for variety. The sides were broccoli cheddar rice, seasoned green beans, and Doritos. I slightly toasted the bread for mine, as it was that 1980s white bread that my wife likes. Toasting it just a little bit helps.
 
The cook, ME was off today. I had a meatloaf sandwich from yesterday's meatloaf for dinner. Tomorrow I will be back on duty. Today our dear neighbor dropped off another bag of tomatoes. For dinner tomorrow I am planning on taking some chicken cutlets out of the freezer tonight and putting them in salt water and place them in the fridge overnight to thaw and brine at the same time. I am planning on making chicken parmesan with a side of spaghetti. I have all the ingredients on hand from the Italian seasoned breadcrumbs to some really good parm. There is even garlic bread in the freezer. The only things I need are two items for the salad. Lettuce and black olives. The neighbor provided the tomatoes, my brother provided the cucumber from his garden, and I have red onion. Hubby will have to make a run to the grocery for lettuce and black olives.
 
No time for cooking so dinner was by Trader Joe....Mandarin Style Orange Chicken Bowl. Verdict = Edible, not enjoyable.

Think we'll stick to Lean Cuisine in the future.
My favorite Asian inspired Lean Cuisine is Sesame Chicken. I make a bag of microwave rice on the side, put a serving or more of it on the plate, and pour the Lean Cuisine over the top. It's a pretty filling and healthy meal that tastes good.

I like that one also. The rice on the side is a good idea to make it a bit more filling.

The Trader Joe's bowl was VERY filling, but twice the calories.

I made pepper steak over rice because I had a green pepper that needed to be used.

Yesterday I made grilled cheese and tomato soup. It just sounded good on a cool Friday. Maybe it is just Catholic flashbacks of my youth when we couldn't have meat on Friday.

Homemade pierogies, sauerkraut fried onions, fried kielbasa, sour cream and Prilosec for dessert
OMG YUM. I love pirogi. kraut and kielbasi is also good.

I'd need a 3-hour nap after that meal.
 
Meatstuff on the grill. I had a 5oz burger and he had his usual Fred Flintstone steak

There were 2 ears of corn in the husk roasted on the grill and I made roasted potatoes in the oven. I had thought about doing this yesterday and we should of because it was raining most of the afternoon today.

My wife made creamy tortellini soup in the crock pot today. Basically, it's chicken broth with cream cheese mixed in and cheese tortellini, tomatoes, and spinach. We both liked it, and there's plenty for leftovers.

Harira is one of my favorite soups.

I had a Marie Calander turkey pot pie and another salad, I'm trying to use it up before it gets slimy. I hate to throw food away.
