What did you have for dinner? -Part dois

Nope. I bought them. They are good but they never really get crispy.

Good on you. Try dusting them in rice flour when they are defrosted enough to take on some coating. It makes all the difference.

Thanks for the hint. I tried to make baked sweet potato fries from scratch in the past and it was a mess. They just baked and were very gummy.

Rice flour tends to absorb moisture. I discovered that by accident.
 
We avoid takeaway pizzas now...they are overpriced compared to shop bought or what you can make at home. Funnily enough basic , simple, pizzas bought in the tourist traps of Rome for about 7 euros blow Pizza Hut out of the water...my wife learned to clone them too it’s just that we thought we’d give PH another go...it was a mistake lol.
any chance Mrs Big Eye has a pizza dough recipe she would let you share with us? it may be that she is doing what i have done, purchase the dough (wewalka bistro thin crust) and then apply her technique to baking the pizza. as you can see, i am now in search of a good great pizza dough recipe

Pizza dough is very easy, I dont even use a recipe because I do it by feel after 30 years of making it. You only need to watch the temperature of the water to keep it under 95F. This can be made in the food processor if you want to. You really need to use bread flour for it to work properly and dont be afraid to play with the amounts because different fours work differently, especially in the summer when flour will absorb moisture form the air even in a sealed bag. The dough tastes best if allowed to ferment in the fridge for 1-2 days. Allow it to come to room temperature before shaping and baking.

first have to find the dough mixer attachment for the stand mixer

that initial recipe in the link did not have sugar as one of the five ingredients
the next one had a provision for 1 Tbs of honey

do you have a sugar/honey ingredient in the recipe you use?

Mine has 1tsp of sugar no honey. It's more for feeding the yeast than sweetening.
 
Tonight it was Hawaiian chicken salad on a bed of greens. A favorite. But since @ASHES posted a casserole a couple of weeks ago, it reminded me of one I made years ago. Tomorrow morning I am going to make the casserole for breakfast. And if you get hungry, you can eat it for lunch too. The leftover chicken salad again for dinner. Wednesday I am making spaghetti sauce and meatballs slow cooked in the crock pot. Wednesday will spaghetti and meatballs and a salad. On Thursday it will be meatball subs and salad. Friday we are going to a steakhouse.

I read recently that a scoop of ice cream before bedtime was good for a good night sleep. Just had a scoop of salted caramel truffle ice cream. Good night!

Do a search on it , you might change your mind. When I was just a kid in the 60's my dad's poker buddies would gather at our house.
Their was Braunschweiger limburger cheese. The entire house smelled like a sewer.
 
Left over ribeye steak sandwiches on French bread with tomato, onion and mayo.
