Who loves it? Me! I've been on a quest ever since my momma died, who made her own, and could never find anything quite up to par...until...Deutsche Kuche German Style Sauerkraut from Aldi's...this stuff is the bomb! Will never buy any other! I like it mostly with kielbasa...and pork loin...with pintos and mashed tators on the side...

How do you fix/like yours?

Me, just made some last night, Bavarian style with apples and white wine (NO caraway seeds in mine please!). That is a great brand. I grew up on Franks but I mostly dont eat it anymore, not after my six years living in Germany, the commissary still sells German brands.

I love German food...don't think I would ever tire of it...

You and me are freaks in that case.....according to the foodies it is almost as bad as English food. I was so in love with Germany after I landed in Munich 1989 compliments of the Army...later did 3 years in Darmstadt which I liked less because the more North you go in Germany the less friendly they are my experience, and giving me a beer garden PLUS nude sunbathers in English Garden with masses of Munchen lager (or Dunkle, I can go either way) and some wurst and kraut and potatoes and a roll too (and mustard).....well after that......

Haven't tried Aldi's yet; have come across too many "German style" sauerkraut that wasn't quite the "German" I'm used to (Silesia/Polish/Northern Germany).
Years ago Walmart had a fantastic brand in a sealed bag in the cooler section, but they discontinued it (sigh). The next palatable one for me was Silver Floss in a glass jar: makes your lips and something else pucker up with joy. (ha ha ha)

Because the stuff is so "potent" (grin), I squeeze out as much liquid as I can and replace it with ordinary water, add 1 finely chopped small onion and 1/2 stick of butter and some freshly ground pepper; bring to boil and add smoked pork loin slices or smoked pork chops (with bone or without, doesn't matter); smother pork with sauerkraut.
Simmer for about 3/4 of an hour; add a little water if needed.

Create the ultimate of creamed potatoes: mash boiled potatoes with potato masher, add butter, cream, hot milk, a light dash of nutmeg and give it a good beating with the electric mixer, until the potatoes are screaming from exhaustion.


I shall give Aldi's Deutsche Kueche sauerkraut a try.

P.S.: I reserve apples, wine, cider, lemon juice, sugar, cloves and such for red cabbage.

Barnacle, I think you'll like Aldi's...I've tried the Silver Floss and found it way too sour, as with most brands...always rinsed mine before cooking but Aldi's is not like that...just a great flavor without all the pucker...

Sauerkraut balls,goetta,bratwurst,cream puffs.Bring on the German festivals.
 
I like sauerkraut...sweet versions, tangy versions, spicy versions. All are good by me. I eat 'kraut mostly with pork, but I enjoy eating it with other proteins
-- fish and chips with spicy or sweet 'kraut, and balsamic vinegar.
-- veal cheeks, spicy-tangy 'kraut mixed with collard greens and sweet potato or grilled orange-colored squash (a rich and creamy mashed white works too, but it makes the plate monochromatic)
 
I hate it. Sauerkraut is one of the things I wont eat.
