Slow Cooker Recipes

OK, even though it doesnt look like Im packing pounds, my doctor said my cholesterol is moving up so I need to change what I eat. To wit, I pulled out the slow cooker from the cupboard and I'm planning to go for less meat and less fried foods (I'll only eat those at the mall).

Right now I'm planning to go with: black bean stew, fish stew, and Indian veggie curries. Any other suggestions for healthy recipes using a one pot thingy?

You should definitely be eating meat, low calories and high satiation

Low fat beef, boneless skinless chicken, tuna, salmon, tilapia, eggs, bananas, oranges, apples, grapes, potatoes and beans

All have low calories and keep you full. Stews are a good idea also as they tend to keep you more full than dry meals

Stick a whole chicken with some water and spices in the crock pot before you leave for work, set on low. When you get back from work, voila, it's gone. The kids ate it because it's done after 6 hours or so. That's what you get for working 10 hours. You should know better.
 
cabbage and bacon. Yeah yeah, bacon is bad, but you use only as much as you like to flavor the cabbage, not to eat your fill. Add a few small potatoes at the end, and you have a fine meal that isn't very expensive either.

Cabbage, eh? I never thought about that, thanks. Do you use any special kind of broth, or is water and bouillon cubes enough?

We have Knorr granulated bouillon on hand. Use sparingly, depending on how much/type of bacon you use. If you don't have potatoes, leftover pasta goes great too. Sounds weird, but it is so good.

Kale braised in hard cider is good too. Add some white beans and your meal is complete. We had some leftover lamb, so I spice the kale with allspice, mint, cumin, cayenne, coriander, cinnamon, onions, salt, and pepper.

Slow cookers suck for meat, why not just boil the meat?

Actually slow cookers are good for the toughest cuts of meat. The 6-8 hour cooking time will render the meat down to the point where you can cut it with a fork.

For whatever reason I've never been a fan of slow cookers.

That being said I am curious about your black bean stew and fish stew recipes.

Black bean stew: soak beans overnight, then add to pot. Cook for about 6 hours, then add in chopped onions, carrots, tomatoes, garlic and cook for 2 more hours. Season to taste. Go with beef broth or water and bouillon cubes and Worcestershire sauce. Thicken with cornstarch and tomato paste. Meat is optional: pork chunks, sliced sausage, bacon, etc. will work too.

Fish stew: any kind of fish is cubed. Add in to fish or chicken broth as liquid or maybe even clam broth. Also add in sliced potatoes, celery, onions, garlic- tomatoes and hot peppers are optional. Shrimp and clams optional. Add some white wine in liquid. Season to taste. Serve with lime or lemon. You can probably slow cook this in 2-3 hours, unlike the beans.

Can of diced tomatoes
Chicken broth

A can of vegetarian refried beans
A can of corn with liquid
A small jar of salsa chosen with the heat of your choice
A small can of chicken meat
A can of black beans drained and rinsed
Simmer in the crockpot for a few hours and then serve topped with shredded cheese of your choice

That seems easy enough. I love anything called soup. Since it is called Tortilla Soup, I might try serving it with quick fried tortilla strips and the cheese. May be a bit of cilantro and lime to give it that little bit of something rather.
Btw, the Supremo Queso Chihuahua Mexican Style Quesadilla Melting Cheese is top notch.

Keep in mind, this data doesn't include the tortilla or the add-ons.

I'm constantly watching my sodium intake after recovering from Congestive Heart Failure. At 156.2 mg sodium per serving, this is a great meal. I use corn tortillas instead of flour tortillas...5 mg sodium per tortilla. But be careful, the add-ons, cheese, sour cream, etc, can increase the sodium substantially.
 
Pulled pork - use the loin, it's very lean. Give it a good rub, put some beer in the bottom 1/2 - 3/4 inch of the pot, cook it until it pulls, maybe 4 - 6 hours, depending on the size of the roast. Pull it up, throw it back in the pot with some BBQ sauce and a bit of liquid smoke, heat it all back up for maybe 20 - 30 mins, and Bob's yer uncle! Garnish with something wet, the taste will be on point, but the lower fat cut might be a little on the dry side, even with the BBQ sauce - I don't find it bad, but I've had that feedback - though only when I've pressed, and they had to come up with something bad to say about it.

Chili is great in the crock pot too - substitute ground turkey and chipotles for ground beef and bacon, if you want to make it healthier.

Now...if you really want to get high tech, I highly recommend an Insta-Pot. It can do both slow cooking and pressure cooking...as well as searing / browning and steaming. We got one, amazing, totally worth it. So far the favorite is beef stroganoff that takes 20 minutes from start to finish to make.

That sounds good. I serve it with nacho chips. I like to cook it in the crockpot because it takes awhile for it to come to a simmer on low and I can do something else without having to babysit it on the stove. I stated a few hours at simmer and that was an error. Everything is already cooked so it just needs to simmer for about 20 minutes.

I have been playing with sous-vide for a while, I started with a crock pot with a temperature control.
The best recipe so far is Salmon.
Cut fillet into serving portions, and brine in salt water in the fridge for 3 hours.
Remove from brine, rinse and pat dry, add salt, pepper, dill, and thyme, place in cooking bag.
Add 1 T of Olive oil to bag and seal.
Place in water bath at 130 F for 40 min.

Prepare a chili recipe but leave out the meat and substitute cabbage, carrots and potatoes and thin it out some for a hearty soup before winter goes away. Its a touch more complicated than that but that's a general idea.

Yum. I use eggplant as meat substitute for the chili, and black beans add extra flavor. Best chili is slow cooked, so we make extra and freeze portions. Makes for great chili dogs in the summer months.

There are a bunch of cabbage soup recipes out there. Just leave out the meat if that's what you want to do, they will still be full of flavor.
 
I think Im gonna do some slow cook chili with lean meat this weekend. I bought the spices this morning. :mrgreen:
