The DECLINE of the biscuit.

Went to Churchs Fried Chicken today.

Back in the 70's they gave be a good biscuit and butter and honey to go with it. Still in the 70's the butter changed to margarine...the minders said it was better for us (it was not). At some point but by the 90's they gave me an over salted lower flavor biscuit with butter flavored oil and honey. I think about 10 years ago I was getting the oil and mostly imitation honey...maybe it was 20% honey.

Now I get basically coffee cake and some sweet something sprinkled over the top.

No anything else.

On the plus side they are back to using good sized chickens, for a long while they were so scrawny!

I used to stop at a Churches Chicken once a week back in the 70's. It was a treat after I finished collecting money on a Wednesday or Thursday night. Tip money well spent. I remember the biscuits with honey. Good stuff.
 
Blame Smuckers! They bought up a bunch of the Southern flour mills that specialized in softer, low protein flour for biscuits and closed them down.

I remember KFC used to have good biscuits. I haven't eaten there in years, though - for no other reason that I just haven't had the KFC "urge".
 
We just had a new chain open up here, Bush's Chicken, big biscuits and fatty white gravy.
 
It's hard to find a good biscuit in restaurants these days. I know I am usually disappointed.
You can always make your own but kinda defeats the purpose of grabbing a quick bite to eat. The ingredients in mine are unbleached flour, cold butter, buttermilk, baking powder and baking soda.
The less you work the dough the better. Make a batch and freeze them.

Say thank you to modern science and big pharma. The breast enlargement is just a side effect and posses no long term risk.

No a few years back chicken producers decided that the small birds were a bad idea, I cant remember the reason.

It all about the age mostly, they let the chickens live longer now.

The restaurant industry was told to figure it out.

You know those new frozen biscuits (uncooked) are surprisingly good, I discovered them last year.

I say new because they are new to me, they are so easy to make that I dont usually want to buy them for home use.

I just learned yesterday that on average we eat more fat by a lot than we did in the 1970', when the low fat food/diet sales attempts started to kick in.

AND I had thought that people are eating healthier now, all these chains and brands have gone to low cal portions, this time when we say we want healthy we meant it I thought (unlike all the other times which turned out to be FAKENEWS), but I was just reading that post Great Recession bad food consumption has skyrocketed ...which makes sense if one is considering the comfort food aspect but still this is not what we get told day after day.

I am getting worried about the depth and the breath of the lies that are being told in America now.

I had a great sandwich today. Fake pork bbq using jackfruit instead of pork. Good stuff, great "feel". Hell I eat jackfruit raw, but when you cook it..damn

I'm sensing a misplaced nostalgia. To hear people tell it... everywhere, not just this thread... literally everything has gone down hill. I think evolving personal tastes have as much to do with it as recipe changes.
