Alternative to lunch meat

Years ago, when my parents were struggling, my dad often complained about the cost of lunchmeat. Ever notice how expensive it is? Anyhow, quite by accident, I found a delicious alternative.

Now that I'm cooking for one, if I have a taste for many things that I like, I have plenty of leftovers. Anyways, a few days ago, I had a taste for pork tenderloin. Too much for one person by a long shot. But it's an easy make. Brown it, season it well. Throw it in a hot oven for 25 minutes or less to delicious medium or medium rare.

For the last few days, as I looked at that huge leftover piece, I've been slicing it very thin and making delicious! Lunch sandwiches from it. Some with just mayonnaise and lettuce. Some with BBQ sauce. some with. Teriyaki. I doubt I'll ever buy lunchmeat again. Takes just a few minutes, if that, to hit it up in a small saucepan with BBQ sauce or whatever. And it's absolutely delicious.

Just thought I'd pass this along...any tips for us for us?
 
I do the same. I'll cook big and then the leftovers go into salads, soups, stir frys, etc.
 
Leftover beef roasts + a sharp knife = a beautiful thing

I buy pork sirloins in bulk (they're about 2-3 lbs ea. where I get teme) and smoke them just for lunchmeat. I've got a nice meat slicer, so I can cut them as thin as I like.
 
I don't get lunch meat that often and when I do it is usually black pepper crusted pastrami or corned beef for a Reuben. Other alternatives for sandwiches are bagels with lox and cream cheese, egg salad, Albacore tuna salad, grilled cheese, chicken salad, and sometimes a peanut butter and jelly sandwich hits the spot.
