What do ya skewer and grill?

I love grilled onions and peppers...interspersed with cuts of beef, mushrooms, ....yummmm....

Last night we used Sweet Italian sausage instead of beef. Was real damn good, but I prefer beef.

So tell me, what do you Kabob?
 
I can never seem to cook them right on the grill. Its either the meat is good and the veggies end up raw or the veggies are cooked and the meat is too tough.

If I want kebab I just usually go a kebab outlet and buy them.
 
The wifie loves em but me not so much....too much work and rarely is all the food cooked right. Beef has to be well marinated for me but it is my fav of the kabobs. What I would rather do is thread strips of meat on a stick, then marinate and grill. Those are awesome.

Steak and shrimp.

Brussel Sprouts. They take some time, but I roll them in a mixture of olive oil, and cajun seasoning first. I do about 20 minutes a side on low heat. It goes really well with grilled chicken still in the skin because it takes about the same amount of time on the same settings.

Bigger chunks of meat. Cook at lower temp.
Most veggies don't need to be "well done". That crispy outer layer is the best.
Just cook until the meat is done.

Yours look delicious.
I usually use beef also.
Cubed filet mignon is the only meat I can use, though.
Every other cut I've tried ends up tougher than a $2 steak.:shrug:

Grilling kebabs is easy...but you have to use indirect heat. I only put them on direct heat for the last minute or two per side to get the grill sear on the meat. It also helps if you keep the veggies packed fairly tight but give the meat a little bit of extra room on the stick. Slow and low...right til the end.

I like the onions, paprika and beef, though I like to add thick cut bacon, lamb and pork instead of only beef.
 
Kabobs are one of my favorites, I'd sometimes rather cut up a steak and have it skewered rather than traditionally prepared, more edges.

The usual suspects - Beef, Shrimp, Chicken
Mushrooms (white), Onion, Cherry Tomato, Bell pepper, sometimes Zucchini

I drizzle or coat all the veg/mushrooms with a little vinegar, oil, salt (or Italian dressing if lazy and you aren't picky)
You can do the beef/chicken marinated in the same, so yummy.
Shrimp, sometimes I peel before, works good either way, but unpeeled seems to stay a bit juicier.

Something about those white mushrooms on the grill, I sometimes just do skewers of mushrooms, I can't get enough of them.

- get a good sear (high heat) on it if you can, then finish indirect or medium as normal...but you gotta have that char IMO
- use metal, cooks faster and more evenly
- try to size the meat/veg so they cook at the same time OR
alternatively do meat skewers and veg skewers...you can do it different times or different heat zones, whatever works.

We had a little middle eastern kabob place open up right near our office, it was incredible, and of course the next time we go back, they closed up shop! Only last a few weeks...so sad.
