Yep, it is just so damn hard to enjoy ramen and water at home by yourself - much better to have a place to pay 100X as much to go out to for that dining alone on ramen and water experience. ;)

I have been to such places... But particularly one in Hiroshima... I'd swim across the pacific for another bowl.

The sounds wonderful yet the video makes a private dining booth seem optional since the joint is otherwise completely empty. ;)

That's not cool man, awful and offensive joke, I once dated a Japanese girl so I'm allowed to be offended by that, admittedly I had to break up with her eventually, had to drop the bomb on her twice before she got it though.

the divider should be floor to ceiling with a closable door. i also think that cubicles should be like that, and don't even get me started on public restroom stalls.

i don't hate people, but i do enjoy privacy. either way, i'd probably give the place a shot.

While I did not have ramen in Japan, I did have tempura at a tempura bar in Hiroshima and it put to shame even the best tempura at a high priced American restaurant. It was simply amazing.

I have no doubt your experience with ramen is as described.
 
I've never had a proper bowl of Ramen. One day.....one day.
Ramen is wheat noodles -- made from flour, salt, and water, but treated with an alkaline agent that gives the noodles their yellow hue and springy, chewy texture -- generally served in a broth (because that's less work than is cooking them in the broth and then not eating the broth...LOL) and accompanied by whatever fresh ingredients you care to add at serving time. Add-ins can be literally anything. Here are some typical things:
  • Hard boiled egg halves
  • Fresh julienned/thin sliced raw (or near or lightly steamed) veggies (carrots, broccoli, mushrooms, bell pepper, scallions, vidalias, water chestnuts, black olives, tomato, etc.)
  • Sliced cooked meat (chicken breast, roast beef, sausage links, bacon etc.)
  • Loose steamed veggies (peas, corn, or anything else small like that)
  • Seafood (shrimp, chunks of fish, lobster, scallops, mussels, etc.)
Typically the broth isn't hearty -- that is, unlike a rustic chicken broth that will have bits of chicken meat and veggies and whatnot in it, it'll be free of such things -- homemade chicken broth with separately-boiled wheat noodles ("regular" rather than raman style; boiled separately so the starch from them isn't in the broth) and whatever ingredients you want to add and the only thing you'll be missing is the springiness. (If you're vegan, use veggie or mushroom broth.)

FWIW, you can make "proper" raman by buying ramen noodle "bricks" and following the directions and adding whatever ingredients (see above) suit you, and voila, you'll have "proper" ramen soup. You can also just cook the noodles and then serve them on a plate with the other ingredients mixed in. Either way, the key is the freshness of the add-ins and the flavorfulness of the broth. You can add tomato paste to the broth, toss in some hot pepper, or whatever else you happen to think will taste good, or that you just feel like eating.

Ramen soup is a great way to make use of leftovers; just put 'em in the bowl with water and the noodles, zap it in the m-wave and eat it when it's done. They're also great for folks who want to eat well (well balanced even) meals and don't really want to cook or use lots of dishes. Just after college, I made ramen meals quite often. Whatever I was going to eat, I put in big bowl with water, the noodles, and zapped it for however long it'd take to cook the longest cook-time item in the bowl, making sure to have enough water in the bowl that it didn't cook out and everything stayed moist. (If you're going to put egg in, either break the egg let it cook the whole time, or add the egg in the shell at the right time after the the rest has been cooking. That will prevent the egg yolk from getting that greenish-grey hue that comes from overcooking it.)

Like good Pho, it's all about the broth. They'll sub-simmer various animal bones and bits for 48 hours, etc., to get it just right. If you do that at home, well, you'll be busy.
 
not my cup-O-tea for a restaurant but if I could get a titty dancer at my private booth then I may be persuaded ............
