First eggs in ten years....

I grew up eating eggs but I became very sensitive/allergic to them. This happened when I was facing a very serious health concern 10 years ago. I had a few months before I needed to undergo this death dance for a cure with my health issue. I chose to get as healthy as possible inside and out. With that, I turned to a very skilled and respected naturopathic doctor in my area.

Part of the Rocky getting ready for the big fight was a strip down diet for 30 days as a cleansing of body and blood. Once the cleansing was over you introduced certain foods back slowly and in moderation in order to tag foods that you are sensitive with and could change blood chemistry that causes inflammation within blood markers/chemistry.

Over three years I tried to reintroduce eggs with explosive results, a food I grew up eating, odd. Last week I ran out of veggie mayo to make my chicken salad and added in some real mayo ( egg based) and didn’t spend the day in the water closet, hummmm, could this be true?

Well, I decided to eat the first egg in ten years today and I feel fine, most may find this a silly thing, but just try going without eggs and all the products that contain them for ten years.

Bring on the omelet recipes……

I had an egg salad sandwich made with 3 eggs, eggy mayo, and sweet mustard yesterday, so glad I am not you :mrgreen:

The eggs I have are from a friend in the farmers market, two days from hatching. He linked me to the feed he uses and all is good as is the range and cage free aspects. It’s not the bad egg scenario, I did the same years back. The only thing that I can point to is I ate 4oz of yogurt, that may have given me extra gut bacteria but I think I also did that back then.
 
We have our own chickens... There is so much difference between fresh eggs and store bought eggs..

It may just be that eating fresh eggs ( i think you really meant to say 2 days from being layed, not hatched) is helping you

I love eggs any style and was glad to learn they are not the cause of high cholesterol.

Not silly at all. I have gone 15 years without milk or milk products. It is not easy, and it is miserable watching people around you enjoy food you used to love; especially ice cream and cake.

I tried the cleans and reintroduction method because I saw it work for so many people I know. But sadly, no success.

A friend of mine became allergic to peanuts at age 12. Using cleansing and reintroduction, she can now eat peanut butter and jelly sandwiches. I am envious of the way she chews the sandwich with her eyes closed and a smile on her face. Having walked a mile in your shoes, I am very happy for you and hope you savor every mouthful.

Try an egg, chorizo, and potato burrito with some cheese and hot sauce with the tortilla nice and crispy.
 
One of my comfort foods (which I havent eaten for years, sadly), is a simple fried egg sandwich: its gotta be runny, with tomato and/or lettuce. Mayo and butter on opposite sides of the bread and maybe a slice of cheese.

Could be a trap. Lure you in and then kill you when you least suspect it. :shock:

I have an egg lady I use when she has eggs to market, but I honestly don't find a ton of difference between them other than the yolks are richer and darker in the free range eggs. They aren't even really free range since she has to keep them penned and move the pen around to keep her chickens from becoming varmint take-out.

to me they taste like the eggs of my youth, much nicer

Depends on what you are using them for. Fresher eggs are generally harder to peel for things like pickled eggs.

true but my eggs were easy to peel today and they are free-range I do find they contain more blood spots though...and thanks for the suggestion of the mustard it was awesome and there is enough left over over for tomorrow

next on my agenda for today is popcorn :thumbs:

It is because there is a rooster about and the eggs are fertilized. My egg lady allows no roosters to be near her laying hens to keep them from being fertilized. She is two-time cancer survivor and is very strict about her diet now. I am not sure that would make a difference, but her chickens, her rules.

hm I didn't know that I thought blood spots were the result of a blood vessel in the chicken’s reproductive tract rupturing during the egg formation

none the less, I still eat the egg

your egg lady sounds very interesting and good for her for beating the cancer twice
 
Recently had a restaurant serve a Pizza with a sunny side up egg right in the middle.. It was amazing and I will never have a pizza any other way...

I’m still a bit gun shy with the eggs, timing could be everything if things go badly so I’m taking it slowly.

The one egg dish I have been dreaming of is one my Dad used to make for me as a kid. Scrambled eggs with green bell peppers on buttered toast. Normal stuff but he had a trick that changed up the flavor a bit. He would cut the peppers into strips and sauté them in butter but then put a bacon press on the strips to heavily caramelize one side, then add in the eggs to scramble.

I also want a roast beef hash and cheese omelet, thats another one from my father. When I was a kid my Mom really didn’t cook for us kids, not out of neglect she was just awful at cooking. Sunday morning regardless of how much I wanted to sleep in I got up to have a full on breakfast with my Dad.

Having grown up on an egg famr, I can you with great accuracy that a lot of egg allergies are based on what the hen has been eating. The more controlled the hen's diet is, the less chance of allergies being a problem. Don't get me wrong, I love good fresh farm eggs from hens that have had highly varied diet, but if you're fighting an allergy, then farm eggs are NOT the way to go.
