It is because there is a rooster about and the eggs are fertilized. My egg lady allows no roosters to be near her laying hens to keep them from being fertilized. She is two-time cancer survivor and is very strict about her diet now. I am not sure that would make a difference, but her chickens, her rules.
That's a myth. We had 2,000 hens and not a rooster in the bunch and we still had to deal with bloody eggs.
