Duplicating Restaurant Recipes.

I really enjoy experimenting this way, If I go out to a restaurant and really enjoy a dish I will work to duplicate it.

My current goal is to duplicate the steak tip marinade from a popular restaurant in Massachusetts, at one time they had a location in NH and I really enjoyed these steak tips but I will not cross the boarder and the DMZ into a communist state to Chelsea Ma. for a meal.

I’m getting close to matching this marinade,but my first try fell a bit short. From internet research of this double secret recipe the base is equal parts of coke, Italian salad dressing, ketchup and cranberry juice along with the usual seasoning.

As I said It fell short, so, I did a bit more digging on the internet and discovered It’s not straight up ketchup it’s Heinz Chili sauce ( which is just ketchup with a kick) and there is also finely chopped fresh mint in the marinade. This came from an ex-employee of this restaurant hiding his identity out of fear of assassination.

So, the beef tips have been marinating for 24hr’s, the weather is perfect for grilling, I’ll report back.
 
Yup I do this too. This is how I ended up learning how to cook Mexican and Hindi cuisine.


Often it turns out, it's almost as expensive to do it at home as it is to go to the restaurant. :)



BUT, a lot of times my home-folks like my version BETTER, so that's something.
 
Just use gas chromatography–mass spectrometry. Though it might ruin the fun...and your wallet. :)

Oh, yes. My mom and I would go to restaurants or parties and turn to each other and say, "Oh, we could do this so much better!" And we usually did too. The fun is in the experimenting.

BTW, there are all sorts of restaurant dupe recipes online. And even with them, when you study the ingredients, you can usually think of little improvements. For example, Olive Garden's zupa Toscana is a cinch to make...but if you like it, you aren't going to cheap out on the Italian sausage; you're going to double it!

That's an interesting marinade , makes you wonder who thought of putting coke and Italian dressing etc.. together

Soda is often used in sauce recipes. I use orange pop in one of my shredded pork recipes. Dr. Pepper is also a common additive sneaked into sauces.

Well, my second attempt went ok, but there is still something missing so more research is needed. It does take three or four tries before I get things just right. They were extremely good, my son thinks I should stick with what I did and they were perfect but I’m on a mission.

The sugars in the coke and juice really tenderized the tips, you really didn’t even need a knife.I think before my next try I will have my cousin bring me a takeout order, she’s down in that area once a week.

I have a friend that maintains the HVAC equipment for the Texas Roadhouse chain in my area. He clued me in on those steaks are sitting in a (salt brine bath) for 24hrs before being grilled.
 
My experience, both in my own attempts and attempts by others, is that duplicating a restaurant recipe almost never really works out.

You may come up with something you like better, but I would suggest that then you're not duplicating the recipe. You're taking their's as a base and creating your own.

Obviously, I take the word "duplicate" literally.

Exactly... i worked fine dining restaurants for fifteen years.

Butter and more butter. No such thing as a pinch of salt. Grab with all fingers and drop.

Sugar the **** out deserts... and butter.

Interesting, I thought they were doing some type of Sous-vide.
I can get a NY strip to come out as good as their sirloin, but not a sirloin!
