So, beets are in season here. I went to a local farm and bought a pile of golden beets, and later, some red beets.

Damn, I've been missing out on how amazing this veg is! Take your beet, red or golden, remove the skin with a potato peeler. Slice them with a mandoline slicer (trust me...its 100% easier than trying to cut it thin with a knife). Put it in a bowl, add some thyme, extra virgin olive oil, and a bit of honey. Slather it all around. Heat the oven to 350, place your thin beet slices on a cookie cutter, bake for 20-25 min, till its crispy on the edges.

Heaven. Sweeter than sweet potatoes and good for you too.
 
I love beets but have never eaten them fresh. This sounds delicious.

I don't have a mandolin slicer. Will the $14.99 one sold by Target do? I was surprised by how expensive one of these is.

That is the one I bought!

Buy them fresh, they last a long time, so they can be shipped anywhere. I am lucky, we have this amazing organic farm near my house, they just acquired a 70 acre part of an old golf course, and the clubhouse and kitchen. On weekends they have amazing piles of super fresh organic veggies and fruit, bread, local honey, etc. I'm going to donate a few of my banana stalks so he can get a good bunch up and growing.

Let me tell you, when you bake the beets, you essentially caramelize them, all the sugar comes out and they are like sweet potato chips, except, they are so damned good for you. Go to your grocer, buy some fresh ones and bake....

How large were the beets? I'm thinking pretty small if they get done in that length of time.

We love fresh beets at our house. We don't peel them first, though. Wash 'em, roll them in olive oil, wrap them in foil. Roast 'til tender at 350 degrees. The skins slip off, then slice. After we cut them in bite sized chunks, we often add a little balsamic, goat cheese crumbles and chopped pistachios or roasted pine nuts. Yum!

Ditto. Ive only eaten beets in a salad, and never warm.
 
Beets will improve your race times if you eat them within a few hours of a race. They boost nitric oxide more than any other vegetable.

It was a huge beet, but some of it was cooked till dry like a chip, some wasn't. Either way...delish.
 
There are those that cannot be helped, beet eaters are on top of the list.

The farm is at Thomas and the 101, but you can't go there anymore, the rez killed their market, so, they got 70 acres of the old continental golf course. They are right behind Big Surf, Weber and McClintock, Saturday and Sunday. Google "Singh Meadows"
