PoS Roast Potatoes with Yogurt Sauce

I did this for Christmas Eve dinner and it was a huge hit.

Ingredients:
- potatoes (rinsed but not peeled)
- salt and pepper
- extra virgin olive oil

yogurt sauce:
- unsweetened plain Greek yogurt
- minced garlic
- minced onion
- black pepper
- chopped chives
- cumin (ground)

1. Place the whole potatoes in baking dish, oil them and salt to taste.
2. Bake in oven at 365 F 20 minutes until they are soft, then remove
3. Cut potatoes into quarters or in half depending on size.
4. drizzle more oil, salt and pepper on them
4. Place back in pan and oven at maximum temp for 20 minutes until they are brown and crunchy on the outside.

For yogurt sauce:
1. Mix all ingredients and refrigerate at least two hours before serving.

Serve this with your favorite entree. Trust me its good. :2razz:
 
That sounds like a garlic/yogurt aoli and the potatoes sound pretty good. I bet it was a hit, just the thing on a cold night.
