Healthy lunches for a teacher

I'm trying to get away from eating the school lunches so I can control what exactly I'm eating. My body responds well to low-carb meals. Can someone shoot me some recipes that I can pack for lunch everyday? Keep in mind that sometimes I have 10 minutes to eat and that's it.

This takes about 5 minutes, tastes great (to me at least), and is very healthy:

- spinach
- chicken breast: I just use canned chicken, like canned tuna, because living alone I often don't eat the rest of what a bake and it goes to waste.
- mandarin oranges
- sunflower seeds
- cranraisins
- raspberry walnut vinegarette
 
This takes about 5 minutes, tastes great (to me at least), and is very healthy:

I pack my lunch every day. My typical lunch looks like this:

1 - Apple
Spinach and Berry Salad
1 Whole Grain Wrap (usually with something like salmon or chicken breast)
An Orange or Grapes
Serving of Greek Yogurt with fresh fruit or berries

For a mid morning snack I typically will have half an avocado on a slice of whole wheat toast or a whole grain english muffin, or I will have a serving of almonds and brie.

Avoid cured meats as they promote colon cancer.
 
Threaten to fail your students if they don't give their lunches over to you. :2razz:
 
Cottage Cheese w/fruit of choice. Pears in those single serving lunch packs work well.
Crackers w/cheese and meat, and a piece of fruit. Sodium but you're young :p
Boiled eggs. Do 2-3 days worth at a time. Peel night before when making lunch. I prefer a side of Hellmann's w/that.
Tuna salad. If you don't already, do it with celery/onion and boiled eggs. Salt/pepper.
Egg salad for days tired of tuna.
Caprese salad - Cut up tomato or grape tomato, cut up 1/2 inch squares fresh mozzarella, cut up fresh basil, balsamic vinegar, and a little balsamic drizzle over the top. Olive oil if you need it.

For carbs I do a lot of meat/cheese wraps (tortilla), put condiment on side since the tight rolled wrap squeezes that out and makes a mess.
And pita/hummus.
 
I don't have specific recipes to offer, but I've found that a small amount of fish or chicken with a salad and some fruit is great. Healthy, light, satisfying, and easy to prepare. I only prepare a substantial meal for dinner, and I usually prepare enough fish, for example, to refrigerate a portion for my lunch the following day to go with a salad. I don't like left overs laying around in the refrigerator for days. They usually end up in the trash, which is wasteful and I always feel bad about it.

Raw carrots and celery, cold sausage, surimi sticks and guauda.
In that order and all without bread. Finish with a banana.

I have this thing about apples - I can't eat them raw. The texture bothers me for some reason.

Chips, that's about it in terms of junk food. I don't eat candy at all. I will eat a square of dark chocolate most days.
 
I caved for tomorrow and am eating deli turkey with cheese on white... raw carrot sticks are already cut as are some florets of califlower and a tangerine

I will make up for that with my breakfast smoothie which consists of kale, half a banana, diced strawberries/blueberry combo with ground flax, hemp hearts, mixed with almond milk

afternoon snack is a small serving of greek yogurt with blueberries

I make my own salad with avocado jalapeno, white cheese and cucumber and the others may be wholemeal breads,yoğurt ,tuna fish

This is great list and pretty much what I take when I don't do leftovers.

I know what you mean. I had to switch to apples as my main fruit, and I did some experimenting to help me with that.

I found Gala and Honeycrisp to be better than most in that regard. Sometimes they are incredible, and always much less of an issue than Red Delicious/etc.
Another thing I found is that If I cut them in slices that are thin and have less skin-per-flesh, it reduces that texture issue.

And not that I recommend it, but light cream cheese + marshmallow fluff mixed up as an apple dip. mmm :) (not low carb, sorry)
 
You people will be the first to starve to death if disaster strikes and food can't get into the cities.....:shock:
 
I have packed a few lunches in my day....usually I prepare my lunch during dinner the day before. Good leftovers make a good meal for the next day.
Most table veggies can be quickly reheated in the microwave, I like broccoli, cauliflower, corn, beans, rice, etc. with various seasonings or shredded cheese to enhance the flavors. Small red potatoes work the same, slice and shake a little cajun season on the slices, and so on....

I am not a teacher, but my wife was, and she is a salad freak....so no way does she get to determine what goes into my lunch....
