Had plenty of rabbit and squirrel when I went hunting as a kid growing up on a farm. Exotic, I guess fried bat in Laos and who knows what other meat. Fried Mangda if that counts, its a beetle in Thailand and once again, who know what else. Especially when I was half ways drunk. Had some Boa or Python in Thailand, papason or my landlord of the apartment building went hunting in southern Thailand and brought it back. Wasn't much of a taste to it that I remember. The bat was crunchy, fried squid cooked over a clay pot with either charcoal of wood in the pot. I really like it. Had some Laotian small deer shot by a Lao Army buddy of mine.

Then again, who knows what I ate hanging around all the time with my Thai and Lao army buddies. I learned never to ask.

Wait, what?

Duck, wild boar, lamb, rabbit and goat are not even remotely exotic.

And you need to have duck roasted. Frying it destroys a lot of what makes it good.

No I have not had roasted duck, and exotic to what I am referring to means what is not commonly available in us stores, goat lamb rabbit etc are common in other countries, I have seen few who carry rabbit, and wild boar I have only seen sold on the internet.

If you need to hunt it or search far and wide for it, it is exotic, whereas pork, beef and chicken can be found in any market in the us, and is what the vast majority eats.

Ah, well, growing up on in coastal CA, those were all very common, including wild turkey, we ate squid all the damned time (still do), etc...

The oddest food/meat I ever had was a fried red ant taco in Mexico City, and it didn't taste like anything except 'crunch'.

I had some great ostrich at a restaurant in Tucson. Tastes more like beef than chicken.

I had elk once. Think it was braised. Reminded me of roast beef a little bit but certainly more gamey than beefy

I think a lot of it is how it is cooked and seasoned. I am not sure what all I have eaten over the years. A lot of the wild game I have eaten was barbecued and for the most part was really good or else it was the booze. You can slow smoke and season anything and it will taste real good. Ground up into sausage or smoked kielbasi and most people will have no idea what all is in there. I have eaten armadillo, alligator, field rat, muskrat, most every bird, rabbit, deer, bear, elk, moose and who only knows how many different fish. Sad thing is a lot of my uncles who new how to make just about anything taste good are dead now and a lot of their secrets to making wild game flavor able are gone with them. It would be nice to hear some recipes for particular wild game that makes them delicious. It is an art to making a lot of wild game edible.

I have had deer that was horrible. I struggled to eat it. Yet I have had deer that was done like chicken fried steak and gravy that was to die for. Between the seasoning the tenderizing with that hammer and the deep frying in bacon flavored grease I couldn't get enough of it.

Squid makes sense in cali due to be close to that island state. Others not so much, but fired ant tacos?? that is exotic!! I had cactus tacos, where they seasoned and cooked them in a way you would not tell they werent meat unless they told you, and I wish they would tell me the recipe I could make a killing on the vegan market selling them.

But as say squid I have had octopus and squid jerky, never fond of it but others threw up when they were told what it was, never ate it on non dehydrated form.

Do frog legs count as meat or as seafood?

Wow, you have had some exotic stuff. Camel?

Going down your list, I've had lamb, deer, duck (a l'orange and Peking-loved both), a buffalo burger (much more lean than cow) and I had some elk in a stew. Since it was in a stew, I think the flavor might have been lost. It was ok. One of my friend's family members got one on a hunting trip and shared the meat around. She made the stew.

Froglegs count as exotic meat if you went frog gigging to get them.

Not to sound racist, but in virginia the farm fresh supermarkets kept frog legs next to pigs feet.

can't say I have. the frogs around here aren't really big enough for eating

I hope you mean in the meat case and not pickled on the shelf. Pickled feet are awful

I've had rattlesnake, Kudu (African antelope), Ostrich, Kangaroo, any number of fried bugs and larvae. Ate the back end of live ants in Australia, you see, on the island we were on, long ago, people got shipwrecked there. The ants ate leaves that were high in vitamin C, so, to keep from getting rickets, they ate the ant back ends, which were full of nice citric acid and vitamin C. Tasted nice, like a shot of juice. Ants weren't too happy about it.

Oddly enough, I don't eat red meat, 30 years plus without beef or pork.

I don't consider squid to be exotic, its quite good and mainstream, same for octopus and cuttlefish. Jellyfish..well, that is kind odd, had it on a flight from Tokyo to Honolulu, not bad, but not as flavorful as squid, and more weird texture issues.

Wild pheasant and turkey, it depends. I've some of each that were quite gamey and needed a chainsaw to cut. Others quite tasty and good. Pronghorn, chewy, but tasty. I've eaten others with mixed results. Buffalo, caribou among them.

Deer - as you said can be gamey. its in the preparation it can be great though.
Antelope - even more gamey than deer. If you don't process the animal quickly after it is killed it tastes like sage brush flavored meat.
Elk - lean and tasty its like a super lean beef. one of my favorites.
Bison - Similar to Elk
Beefalo ( a Bison/Cow hybrid ) pretty good flavor its like buying lean beef.
Pheasant - not very substantial but great in a spaghetti sauce.
SageGrouse - about the same as Pheasant but not as good.
Rabbit - greasy and not very substantial its like the dark turkey meat kinda.
Duck - I find this also greasy I don't see why its a delicacy.
Lamb - I'm not sure I consider lamb exotic since I have a friend whos dad is a sheep rancher.
Goat - I agree with your assessment .
Eel - not bad as a sushi, I prefer it to Tuna

Having eaten in SE Asia, I probably ate my fair share, but I wouldn't want to know what I ate. The one exotic meat I havent gotten enough of is eel though, they are awesome.

Snake, tastes like chicken
Hedgehog, smoky bacon
Muskrat, dark turkey meat.

Alligator tale fried
Frog legs fried
Lamb roasted

Lets see.... being a back woods boy from Indiana

Squirrel. Loved it
Rabbit.. Loved it
Pheasant.. Loved it
Quail.. loved it
Wild boar. loved it
Turtle.. Mom told us it was rabbit....
Mushrooms.. The big sponge mushrooms we found in the woods..
Fish.. Catfish, bluegill,,. sunfish., all caught while fishing with my buds...
Ground hog.. Fat & rich tasting
A few bugs I am sure, ( involuntary )

And probably some others..

Bear (heart & liver) - nothing like you'd expect, greasy but very tasty.
Wild turkey - tough, not worth the chew
Caribou - eh. Might as well been venison.
Deer - Well prepared, can be very tender, texture like a good corned beef. Badly prepared, gag material
Rattlesnake- Been there, done that, no thank you.
Ostrich - gamey.
Alligator - a mouthful of the Hudson river, with a slimy after taste.
Scungilli or calamari - I will have to guess it wasn't the best prepared, since others are ecstatic about it, but to me, it was like a mouth full of rubber bands...
Squirrel - eh
Possum - eh

I'm pretty brave when it comes to trying new foods. If I don't like it, I never have to have it again. Some weren't worth wasting the meal on though.
