What the hell James? Chicken Piccata needs capers!

Here's an easy dish that turns out very nice. Roast some chicken in the oven, skin on, until it's done all the way through and the skin is brown. Then just use a grill brush to coat the pieces with store bought sweet and sour sauce. Put it back into the oven and let the sauce caramelize onto the skin.

Easy sweet and sour chicken.

Because chicken picatta without capers is just lemon chicken. :)
 
Placed the chicken in an 8" pyrex pan, sprayed with olive oil Pam, liberally sprinkled with Old Bay, covered breasts with cut up yellow onion, again with the olive oil spray and Old Bay. Baked uncovered in a 400 degree oven for about 45 minutes. Fantastico!

In my oven, right now is something very close to this.

Boneless chicken thighs. Old Bay. Onion. Instead of olive oil Pam - BUTTER!!!

Will let you know how it tuns out.

Smelled much better than it tasted.

I don't think I used enough Old Bay.

Plus, I don't know if the combination of thighs and butter was as good as if I'd used breasts and butter.

It was good, but not as mouth-watering as I'd have hoped. Next time for sure it's white meat.
