Calling All Fried Oyster Experts:

Just visited for the first time last AUGUST. Big mistake coming that time of year because I cant deal with the heat anymore which was a bummer, did not get to do as much as I wanted, but I sure ate good. Liked all the music in the French Quarter too.

Yea it's unique. Gotta wear ball powder when walking around in august. Makes the heat somewhat bearable.
 
Leave washington and come down to Louisiana. No ones ever ****ed up oysters down here. It's like magic. Raw, chargrilled, fried etc. All taste like heaven in the bayou.

Emeril is my fave. When I'm looking up a recipe and I see one with Emeril's name on it, I use that recipe. Because Emeril has never steered me wrong with food.
 
WTF, is this like rap music or somethin? Never heard that before but there might be something to it. I have spent a lot of years living right on the Pacific Coast, my time on the East Coast can be measured in days so I am in no position to comment on the guts of the matter but thanks for voicing it.....something to consider. I tend to get around, these places in Seattle selling me crunchy in a bad way fried oysters are not crap places. Maybe they are going for "rustic"?

Well you got different species for one- eastern oysters versus pacific oysters, Maine red lobster versus rock lobster. But also I seem to find the seafood restaurants at the East Coast seem less commercialized, more mom and pop homey stuff, so they treat their shellfish with tender loving care. And the northeasterners are masters at preparing it.

Well I tell yea, chef's here on seafood are WAAAAY too ****ing trendy for me. I am the grandson of Michigan scratch farmers and businessmen/salesmen that worked 90+ hours a week with no safety net, East coast "We do it right and we dont change it because, why would U?" has a deep appeal to me.

I worked with a guy in the Gulf that was from Massachusetts and he would never eat the seafood from the Gulf. He said NE seafood was so much better.

I can see that view. The Gulf gets all the sand and trash from the MS River, and the NE has the colder water.

I do love some Maine lobster, but I haven't had it in years. It's too expensive compared to what it used to cost. I guess beef and pretty much everything is really expensive now. But I was buying sushi tonight at the market and the live lobsters were $15 a pound. And these were big lobsters. I'd have to have a really special occasion to spend that sort of cash on some grub that I have to cook myself.
