Fried vs Broiled, Grilled, Smoked, ...

Absolutely not. Grilling burgers removes the fat, makes them drier than when fried. No more than 80/20 and pan fried. It's the only civilized way to make a hamburger.

You might be overcooking your burger on the grill. I make thicker patties and we eat them slightly pink but brought to temperature. When you bite into my burger the natural juices run down your face if you are not careful. If your burgers are dry you need to find someone who knows how to grill and show you how to make a juicy burger. I prefer the natural juices to the grease. Grease gives me indigestion sometimes while natural juices have never bothered me.
 
Pan fried steak, drizzled with butter...mmmm. You can even finish it in the broiler with some onions or topped with an excellent cheese.

The only steak I fry is chicken fried steak or thin Philly cheese style steak. I have mopped butter on a grilled steak. There is no question the caramelized butter on meats is awesome.
 
When do you absolutely prefer frying something over the other options? Ever? Always?

depends on the food.

potatoes : baked or mashed, but i definitely enjoy them fried.

onions : fresh, pan fried in olive oil, or fried as onion rings.

bacon : pan or microwave fried

pork, such as a tenderloin or pork chop : battered and fried.

seafood : same, though a baked tilapia fillet is sometimes good.

Edit to add: by "fried" I mean cooked/boiled in some kind of oil/fat

I won't eat boiled perogies until they have been lightly sauteed until golden on one side
 
Wontons. Much better fried than steamed. With sweet & sour sauce fr dippin.
 
Fried wontons with a cream cheese and pineapple filling are super-easy to make too.

But it's been years since I've fried anything but an occasional egg at home--too much effort and too messy and unhealthy, that's what fried-chicken joints are for.

Catfish must be rolled in corn meal or masa and fried.

I didn't say dry, I just said drier. You can make a good burger on a grill, but it comes out better when fried on a flattop or large skillet.

Quite obviously, that's similar to a coke vs. pepsi argument.

The additional tastes one gets from a flame broil or grilling for many makes that avenue "better".
 
Frying is for fast food losers. Few people especially northerners, west and east coast people know how to smoke meat. We never fry, instead we either smoke a bunch of meat for about 12-14 hours and feast off it all week or grill over mesquite wood. Far superior to frying.
