Look Mum, One Hand.

Well, I have one good hand/arm and I managed to make a nice lunch for six. I’m stylishly sporting an arm sling to keep 30 sutures in place.

The menu: Moroccan chicken salad rollups dressed with a yogurt lemon juice and Thai basil dressing (no mayo). The base seasoning for the chicken was Ras El Hanout and dried hot peppers with basic off the shelf seasoning. I dress this salad for the rollup a bit dry, but add a dished dipping ramekin for the yogurt sauce with a lemon wedge and garnish of the Thai basil ( substitute, mint ok)

Side One: Thai peanut noodles,, for this recipe type in “Thai peanut sauce” in this boards search box and my recipe will come up. This can be served hot or cold, I went for hot.

Side Two: I went with a basic tomato, red onion and cucumber salad but added a hint of the Thai basil/mint into it to carry the flavors thru the dishes.

Almost all of this lunch was prepared in advance 90% of it because I thought I needed extra time with the limited chopping. It really wasn’t an issue, this nice meal can be done one handed or more actuate on movable hand/arm and one that holds.
