I love cooking shows. Top Chef. Iron Chef. Masterchef.

What is annoying beyond belief is the judges and chefs insistence on seasoning. Cooked perfectly "but it was underseasoned"

Why cant a chef use natural flavours. Artichokes are great. Just watching Top Chef and judges dinging contestant for not enough seasoning. Annoying.

Seasoning always translates so well over the TV screen.

Imagine two pots of perfectly cooked beans. In one pot the beans are just boiled in water until done. The second pot of beans is cooked until done but before those beans were added to the pot some onion, garlic and pieces of ham were sauteed in that pot and later some salt was added. Which pot of perfectly cooked beans do you think tastes better?

Pretty much this. Very few food items taste good by their own virtue - it's all about the seasoning and the different combinations of ingredients.

Presenting unseasoned food is fine...but its not 'chef' worthy. Anyone can present natural food. A chef enhances the natural flavor of a food and elevates a product beyond what anyone at home can do.

I said seasoning. Not garlic, ham and onions.

I know i worked in five star restaurants but i am no chef. Anyone can season properly. It is not tough and I do it all the time at home.

Many foods taste great on their own. Artichokes. Avacado. Salmon. Steak.

An artichoke being served with a sauce... why does the artichoke need to be seasoned if the sauce is meant to compliment or enhance the flavor profile??

Remember. Seasoning is salt, herbs and spices added to enhance flavour.

That's all.

I wouldnt say 'anyone' can season properly. I mean...sure...if you want your food to taste like ___________ with salt...anyone can season food properly.

Seasoning is like driving... anybody can basically do it, just not everybody can do it well. I would say that seasoning is even easier than driving though.

And doesnt that one sentence answer your OP?

No. Sometimes natural flavors might be what a chef wants to display... but the judges almost always criticize that. Why?

because in a chefs contest they want more than what just anyone can provide by supplying a raw non-enhanced ingredient. If I want natural and unseasoned avocados (and who would) then I would buy them from the story, cut them, and eat them. If I want chef quality products from a restaurant I would definitely not want to pay for something anyone can do.

I think that you missed my point...

I think that you missed my point...

in all fairness, i don't think you had one

the seasoning of the dish is a significant part of the resulting flavor profile

Nah. I think when you get on tears like this you really arent seeking answers to your queries. You asked...I answered. If you want to be a contestant as a chef, you deliver seasoned, enhanced, and improved food that any Joe Schmoe couldnt produce. That is all.

I never once said that seasoning should be omitted... not even completely from a dish... ever. Want to try again?

I just asked a simple question. Chef creates dish with many components and two sauces. Artichoke heart is not seasoned but is complimented by sauce and rest of dish. Judge chef says... this dish is amazing... BUT , the artichoke was underseasoned and that is why you don't win. What?

Is there a difference between seasoning and adding herbs and spices?

No, all the dictionaries say this

noun
1.
salt or an herb, spice, or the like, for heightening or improving the flavor of food.

This is a rebellion against chefs who refuse to season their food under the excuse "I want you to taste what the food taste like", but I always figured it was laziness, and excuse to not do a huge portion of their jobs. If I have to fix at the table food that I am spending a good bit of money on that has been allegedly prepared by experts then there is a big mother****ing problem, and I will complain. I will literally demand the proper seasonings from the kitchen, and fix the dish. I will also probably never be back.If I get any flak there will be no tip.

Because apparently, if you put out an unseasoned main ingredient, you arent a 'chef'.
