Pumpkin banana oat muffins

Makes 9 to 12 muffins

Prep Time: 10 minutes Cook Time: 20 minutes



Ingredients

3 cups rolled oats

1 tsp. pumpkin pie spice

1 tsp. cinnamon

1 ½ large, very ripe bananas, peeled & broken into chunks

½ cup unsweetened applesauce

1 15 oz. pure pumpkin puree (make sure NOT to buy pumpkin pie filling)

1 tsp. alcohol-free vanilla



Directions

Preheat oven to 375F
Line a muffin tin with paper cups (I use parchment paper cups)
In a large bowl, combine oats, pumpkin pie spice and cinnamon. Blend well.
To a food processor add bananas, applesauce, pumpkin puree and vanilla. Process until everything is incorporated. (I don’t mind having the bananas a tiny bit chunky.)
Add wet mixture to oat mixture. Quickly fold to combine.
Evenly scoop (I use an ice cream scoop) muffin mixture into prepared tin.
Bake at 375F for 20 minutes. Let cool a bit in muffin tin before removing. Enjoy!

I got a question for you. I LOVE all things pumpkin. But why? Why do we eat pumpkins? Ever tried cooked pumpkin WITHOUT all the allspice and othe sweeteners and seasonings? It's a disaster on your taste buds. Really. It's awful.

Seems to me, I could take cow manure, and add in that much in the way in seasonings, and it would taste pretty good...ignoring the e.coli.

So why pumpkins?

Im not an expert. I know pumpkin tastes good in baked things and that pumpkin soup is a big thing other parts of the world

Yeah, I love pumpkin soup. So much so that I made it for myself.


Next time you bake, taste a little of that can of pumpkin mush. Brace yourself. It's bad.

I mean, I also love sweat potato pie. And I get that...sweat potatoes are good to eat, even without a bunch of doctoring. I feel like we could make something that tastes like pumpkin pie without using pumpkin, because the flavor of pumpkin pie doesn't come from the pumpkin. It's from the other stuff you gotta add.


Just something I've wondered about over the years, lol.

I have (in the past) baked something similar, though I do add just a tablespoon of dry tapioca to the ingredients.

And I don't use a food processor, I just mash it all up in a large mixing bowl with a chrome potato masher, and then stir and fold it all with a large spoon.

These sound fantastic. I love pumpkin, I love bananas, and I like oats.
How come you cant use the pie filling?
