Another way of looking at things.

Although human beings can survive on many different varieties of food, in order to function, feel, and look our best, we must lean heavily on our biological design as herbivores, plant eaters. But not just any plants. We are starch eaters, also referred to as starchivores or starchitarians. Starches are plant parts that store an abundance of energy, otherwise known as carbohydrates, to power our rocket-building brains and to sustain muscles that can run for days without stopping. That special fuel is sugar, which is stored as long chains in starchy plant parts often referred to as complex carbohydrates.

Starches that grow underground, such as potatoes and sweet potatoes, are so nutritionally complete that a person can live in excellent health on these foods alone. Starches provide an abundance of protein, vitamins, minerals, and dietary fiber, with just enough essential fat to meet all of our dietary needs. Grains and legumes, however, need a little help from fruits, like oranges, and green or yellow vegetables, like broccoli, in order to provide adequate vitamin A and C.

The most important evidence supporting my claim that the natural human diet is based on starches is a simple observation that you can easily validate for yourself: all large populations of trim, healthy, athletic, war-fighting people, throughout verifiable human history, have obtained the bulk of their calories from starch. Examples of once-thriving people include Japanese, Chinese, and other Asians, who ate sweet potatoes, buckwheat, and/or rice; Incas, in South America, who ate potatoes; Mayans and Aztecs, in Central America, who ate corn; and Egyptians, in the Middle East, who ate wheat.

Starches are also a big factor in diabetes.
As far as historical yes starches provide calories but most starches provide little nutrition. take a russet potato. a staple in the usa. Some decent vitamin c, a modest amount of Iron, a very small amount of protein and other than that nothing worth mentioning.

Now if you were talking about a yam for instance. lots of nutrients.. but how many of those do we eat..
Or we could talk about rice... white rice that we eat that has been processed.. nothing much in it but calories.
just about any modern grain or tuber I really doubt has the nutritional value that those cultures were eating.

Its interesting that reminds me of I was watching some Iron Chef thing and they were working with Oats/Oatmeal. It was interesting to see the like Quaker Oats type of stuff vs Scottish Oats, Steel Cut (Irish) Oats etc..
Again the stuff we have here is so processed.

those long cook oats aren't that difficult to work with. just soak them in water overnight

I'm a low carb person myself. The problem with carbs is that they provide quick energy, but then they store the unused energy as fat. When you go low carb your body doesn't have that quick energy so it burns fat for energy instead of carbs.

Look at your teeth. Most of them are NOT "designed" for eating plants.
How many stomachs do we have?
How is our entire digestive system "designed"?

It's fine if you want to promote eating veggies, just don't make up lies about things when you're doing it.

Veggies and greens are healthy and good for humans. No doubt.
But humans were not "designed to be plant eaters".

If you're going to be truly accurate humans were "designed" to be omnivores.

Absolutely not designed to be herbivores. That's a flat out lie.

true, you could be a short lifespanned human and eat meat. But you don't have to be.

Ever wonder why corn still looks like corn in the commode? You are right. We shouldn't be eating stuff that comes out the same as it went in.

those long cook oats aren't that difficult to work with. just soak them in water overnight

Get a small slow cooker, set, sleep and breakfast will be ready in the morning. I do that with steel cut oats mixed with other grains, esp quinoa.
