Let's have those chip dip recipes

This is my other favorite dip recipe.

Rockin' Guacamole


3 ripe avocados, pitted, peeled
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
1/2 cup chopped onion(I mince or finely chop the onion)
1 tablespoon lime juice
1/2 teaspoon salt
Ground black pepper
Tortilla chips, optional

DIRECTIONS

Mash avocados in medium bowl. Stir in drained tomatoes, onion, lime juice and salt. Season with pepper to taste.
Serve with tortilla chips, if desired.

Only thing I change is I don't "mash" all the avocado, I chop half of it into small chunks.
I like a chunkier avocado dip. :mrgreen:
 
I'm all about simple but delicious. The following recipe delivers and everyone who has ever tried it has loved it.

1/2, 3/4 or 1 lb - Ground Chuck, using the amount of meat you want (ground beef works, but not quite as tasty)
1 - 8 oz package of Philadelphia Cream Cheese
1 - 16 oz package of Original Velveeta Cheese
1 - (10 oz?) can of Rotel Diced Tomatoes & Green Chiles (Original or Mild, depending on your desire of spice)


Brown the ground beef, slice the cheeses (to melt faster) and put all ingredients together in a pot and heat, stirring occasionally, until cheese is melted.

Could not be simpler or more delicious.
 
About 5 gallons of salsa from Poco and Mom's.

Barring that, artichoke hearts, spinach, minced garlic, green onion, a few black olives and a handful of GOOD Parmesan cheese in a blender with a little more than a little olive oil, salt and pepper. Chop it up pretty fine and serve with tortilla chips.

Hmm not sure what poco and mom's (local?) is but the rest sounds great to add to some salsa. Artichoke and spinach are two of my favorite dipping ingredients. One of my aunts makes amazing salsa that would work just fine.
 
My Mother would do a hot crab dip for parties, and I don't know the recipe,
but it looked something like this one without the cheese melted on top.

This will blow your mind. Best tortilla dip ever and its simple. 1 block of cream cheese, 1 small jar of Pace salsa (mild/med/hot...your choice). Bblend.

Another variation:

Block of Velveeta and a can of Rotel, microwaved.

Agreed.

Actually, we always by the knock-off brand.

I used the brand name cause it was easier to understand.

Blended? Too much work. We just pour the salsa over the block of cream cheese. :2razz:

Not so much a "chip" dip, but with wheat-thin type crackers I love a simple cheddar-horseradish spread that we find at out local Farmer's Market.
An Amish group usually has it at their spot.

Fabulous stuff.
 
Velveeta cheese and a can of those Mexican tomato bits (can't recall the name) and fine chopped jalapenos. Slow low heat in a sauce pan melting the mixture and serve hot with tortilla chips.
