Crockpot breakfast casserole
For this recipe I took one russet potato, one jalapeño, and half a yellow onion, diced them finely and placed them in bottom of crockpot. (I de seeded the pepper, if you’re a spice loving wild man you can leave the seeds in). Next you get your protein, I used leftover ham, diced and lightly fried in butter, that goes on top of veggies. Then I took six eggs and mixed in a teaspoon of cream of mushroom and a quarter cup of cream (specifically half and half) and beat them thoroughly then poured them on top of the potato and ham layer, then hit it with salt and pepper, then a quarter can of diced tomatoes. Cover and cook on low for 8-10 hours. I got up an hour before my wife and covered the top with tilamook cheddar cheese and set the crock pot to “warm”
Serve with coffee and toast
