How Do You Make A Hamburger Patty?

80/20 ground beef. out of the freezer dethawed in fridge over the night.

I whip an egg and mix it evenly into the beef for binding. and usually add basil, parsel and ground black pepper to the beef. cook over coals, only over coals.
 
I slow cook them on a smoker, which is essential because I use a 50/50 mix of ground beef, and pork sausage. I also mix bread and eggs into the mix, I do not know why the bread and eggs mixed into the burgers work, but they sure do.

isn't that basically meatloaf?
 
The Wall Street Journal covered this pretty thoroughly on April 5. I concur with using high fat (15-20%) beef shoulder mixture and frying on a very hot griddle. The ice cube in the middle to keep it moist is an interesting variation.

I usually just drink the whiskey, so if the burger doesn't come out perfectly I'm not overly concerned, because damn, that whiskey is good. Don't ever skimp on the quality of the whiskey.

I prefer to cook with wine...sometimes I even put it in the food.
