Define "Cage Free" Eggs

What is supposed to be the science behind eggs that are cage free making them somehow better?
The hens actually get a little exercise, and are healthier. Even if such better health doesn't make a better egg, I only buy such products as the chickens themselves are more humanly treated.
 
The only thing that really makes a difference is the absence of hormones and antibiotics. [usually in their food and drink]

Our hens are in a 10 x 20 x 8 enclosure much of the day and night for their own protection against predators and the environment. They are 'yard birds' about two hours during the day , eating mostly bugs and grass where no chemicals have been added.

Allowing them to eat bugs is a bug [big] plus.

Those chicken breasts you buy in the supermarket? Those lovely breasts were raised in the same way. They walk as day olds till they can be sexed, then put in a cage with their legs jammed through the lower wires. There is a food tray that moves across in front, and another passing at the rear to collect the manure as that can be composted and sold.

They use a breed of chicken has been bred especially for large breasted for more white meat and fast growing. I do not recall the name of the breed, but after a month or so they cannot walk as their legs never get strong enough to carry the weights they obtain.

Stress plays a large part in how an animal tastes or even the eggs it lays. Animals when stressed release hormones which greatly affect the meats taste. This is why alot of hunters prefer the cleanest kill possible, sure a deer that limped off slowly dying might taste ok, but it will not taste as good as the one that was shot, ran a short distance then dropped.

Eggs are the same way, alot of the hormones introduced during stress pass on to the egg, and affect flavor. In a caged environment, practically all animals would be stressed out.
