A Better Cheese Dip For Chips

8 oz.. of grated cheddar-don't buy shredded cheese, shred it yourself, packaged cheeses usually has corn starch in it.
1 tbs. arrow root powder
12 ounces evaporated milk
1 bunch green onions finely chopped
1 12 ounce jar of roasted red peppers drained and finely chopped
2 tbs. of your favorite hot sauce

Toss the grated cheese with the arrow root powder in a 6 cup microwave safe bowl.
Stir in the evaporated milk.
Microwave on high for 4 to 5 minutes stirring after two minutes to assure the cheese melts uniformly.
When the cheeses is smooth and melted add the green onions, peppers and your hot sauce.

This does sound good. I am going to presume this would also work well in a double-boiler if you decided to go that route.
 
What does the arrow root do? (Just curious)

It is a better thickener than corn starch. Corn starch adds a wallpaper taste to food.

Maybe that's just me, but I got the idea from a TGIF of all places, and the bacon cheese is really damn good!

Looks good. I agree on the shred-it-yourself-cheese. It's lightyears better, both because you get way better quality, but also you lose all of the nasty separating powder, and you start losing flavor the minute it gets shredded.
